If you pick at first hint of color (blush), you'll have less cracking and longer storage. Let them ripen on the counter out of sunlight. For us, the cracking with 100F is awful. A cracked tomato doesn't last longer than a day before beginning to mold.
I usually pick them when the tomatoes start to blush. I haven't been able to get to the garden in a couple of days. Hope we have better tomatoes next harvest.
I put partially-ripe peppers on the counter with the tomatoes, and they usually ripen the rest of the way. And then the pepper plants produce even more fruit in the next wave.
