    Seth, Scott, been watching you guys for a couple of years, you guys do Ohio proud, I wasn't born there but grew up in Cleveland and amazing information, skill & professionalism, don't forget Sean, you guys made me get Victorinox knives, great buy and just love watching the vids, ya'll taught me so much on BBQ'ing and what cuts of meat and how to prepare them.     That market of working knives are exeedingly difficuldt to enter, or even be successul at. In the factories I worked in, back in the day- we were every so often try out different brands with different handles and steel quality. One day of working with a sub par knife felt like punishment. So we very seldom were introdused to knives that we felt was as good or better than what we knew. Victorinox was always the gold standard. Love this channel and keep doing what you do.

    i've noticed you're having issues cutting as smooth as you normally do. muscle memory is key. i can tell you aren't used to that new knife yet.

      What even makes a good knife sharper than the rest? I’ve never understood that, I thought it always came down to who or what sharpened the knife previously. I would sit there trying to sharpen the shit out of kitchen knives 😂 I was still a teen and didn’t know better.

    You folks are crushing it!! I always thought being a butcher was one of the top neighborhood professions. Helping hard working folks feed their families with good quality meat. My Uncle retired a butcher and I wish I’d followed in his footsteps.

    Appreciating the changes your team has made in production technique. I don't know how to describe it, just know it when I see it. Very enjoyable to watch and I learned things about carving knives and picking ribeyes steaks and a lot more.

    Excellent video guys! Those knives are bad ass. Picanha is one of the best cuts on the cow in my opinion. With Guga on the internet, I am surprised you don’t easily sell them out.

    I cut a whole sirloin and took that piranha off just by watching these guys. I had never heard of nor had i ever eaten one. I agree with you guys about that cut of beef. Cooked it in a cast iron pan and my god, was it tender, so tender I could cut it with my fork. Best be believing that many more will b e cooked here at the house. Next time Lon the grill!!!

    I’ve been lucky enough to visit their store and bought some beef and buffalo meat with some seasoning.. great stuff.. we met both Seth and Scott good people, it was like a special trip for us as we were on a business trip up to Ohio from our home in Florida..looking forward to the next time we get up there..gonna have to try one of those knives..

    You guys should really team up Gustavo "Guga" from @GugaFoods and @Sous Vide Everything. You guys would make an amazing collaboration series with his crew. He could teach you how to cook that picanha the right way. Just a thought. And if you have any left overs, or maybe a spot at the cutting table for me to come watch and try my hand at trimming a few steaks, I wouldn't complain at all.

    First heard about Tritip in 1976. Went to a get together in the Santa Ynez valley North of Santa Barbara and the guy in charge of the grill said, " This is Tritip" and I was like Huh? I did not refuse a portion. Now I slice Tritip up and burn them on the plancha on a regular basis, wife says "Do it again".

      @kevinlong9254 Yes, i totally agree. I am in Canada and a 30-year plus user of victorinox ( and other knives). I buy them wholesale for 40$ a knife . I know Montana knife company makes good knives, but $492.00. I just can't see it being that much better. $450.00 more

      @@DareDog. USA made isnt cheap, but swiss made costs alot too. By the looks its a well made, lets say victorinox inspired, knifeset with thicker blades.
      if the "generation warranty" of a small company and the, at least by the looks of it, higher weight of the blade are enough of a selling point to spend that much more on a knife targeted at interested amateurs like us is a decision everybody needs to take for themself.
      just to make that clear, spending that amount on your primary working tool is for sure no big deal, every handyman knows that you regret saving a little money every day you use the tool. im no butcher so i dont know if the higher weight because of the thicker knife is an advantage , but for me a lighter knife leads to more precise and powersaving work. thats why my boning knife is a victorinox and my veggy knife is a thick one to save power when i chop the greens.

    The Picanha is one of my favorite cuts of steak, it's delicious and still relatively inexpensive since so few people are familiar with it. Selfishly, I hope it remains one of the lesser known cuts because beef prices are getting pretty ridiculous.

    The Denver is my favorite steak. IMO it's a good balance between quality vs price, especially as I'm single and usually get 2 meals out of one package (my store usually has them in sets of 2).

    Another great video. Definatley do a video on the Picanha. Noticed you didnt hone the new knife as often as your previous ones and they sound different (Sharper) as you are cutting the steaks.

      You don't even know that it's not blood. Only people who've never cooked a lot of steaks and a roast think that they should be dry if they rest long enough. Juicy steak will always be juicy.

After reading your comment, I literally looked for a second and SAW VICTORINOX CUTLERY KIT $112.99. It means they still sell it which when means that its a staple in their brand. If it wasn't good knife, why would it still be associated with the brand? Ya'll got to get off the internet man some of this stuff isn't hard to figure out with a little context clues.     You mentioned that the Flat Iron is the 2nd most tender steak on the animal. Would you say Flat Iron is more tender than the Teres Major? For my money, they are usually far more tender than the flat iron but appreciate there are only two on each animal and, as a result, not so commercially available.

    Welcome to the world of marketing. There are an incredible amount of knives on the market. Hopefully they are legit knives and all the more power to change.
    On a side note. Our cuts of beef are different in Canada. A great video would be to do something about the way different countries call their cuts while doing it. That would be incredible.

      MKC is a very small company. USA made And that cost a lot these days. And they don’t have the buying power the bigger companies do. They will sell out fast.

    I ate 3 chuck eye steaks today. I love hanger steak, it's hard to find. Raw beef is my favorite. If my steak is more than rare, it's burnt.

    I was just thinking with you experience butchering and cooking meat on grills smokers with briquettes or lump, charcoal or wood splits. You guys should put together your own cookbook that would be very interesting!

      I agree completely. These knives are $492 in Canada. I can buy 10 Victorinox blades for that price!! I am sorry guys, love your channel but that is too much $$$ for the average guy.

    When I was a kid, my uncle would get beef from a local slaughterhouse...it was so fresh, I'd eat 1/2 pound of ground meat with just salt and pepper...my mouth waters just thinking about it. Not too many places I'd trust to get Steak Tartar anymore...
