    Brings back memories of my childhood. Momma and Granny did it that way. Granny was too poor for a pressure cooker. Raised up 9 kids as a widow during the Depression 💜 A country girl can survive.

    The National Center for Home Food Preservation recommends bottled lemon juice. I believe because with fresh squeezed lemon juice there is no guarantee of the acid level.

      If you're really worried about this non issue, get your hands on some litmus strips for acidity. I've never bothered about testing as I never had a problem. The trick is to use very ripe heirloom varieties. Dont buy bulk tomatoes at the store where they have been forced with ethylene gas to ripen. Those won't work. It would be nice if these silly agencies, all vying to be relevant, would explain the whole story.

    I love to watch your older videos and then watch more recent ones because I see your confidence has grown. Not that you were insecure; more that you seemed aware of your audience in a “hope to please” way and now you seem to relate in an “I’ve got something good to show you” way.     We always set the oven to 200 degrees and filled it with the clean jars. Grab one with a towel as you need them.
    Also, always store your empty jars with the old lids and rings on them. To protect the rims from getting chipped.

    I did a lot of canning with my mama as a kid. We lived in a farming community and fresh fruit and produce was very plentiful and affordable. Good memories for me now.

    Hello from Lexington, North Carolina!❤ I froze tomatoes yesterday, I have the freezer space. It was my first time doing it. I think canned vegetables look so pretty. I remember listening for the jars to seal, there's something satisfying about it. Love you Tammy!❤

    Love your videos, but you didn’t show wiping the rims or de-bubbling the jars to get air bubbles out. A lot of people have never canned before and don’t know all the steps to canning. Just trying to help. Have a blessed day!

    I used to can tomato juice, relish, and chow chow when my father-in-law grew his garden and sold plants. I only did water bath canning and I really enjoyed it alot. Thanks for sharing and bringing back my own joyful memories of the past.

    Canning food from our garden makes me feel in touch with my heritage. My mom was a very reluctant canner. I love it! I'm also a seamstress, which my mom was never interested in, either.

    I love the idea of doing batches of 5-6 jars at a time. That way, it is something that you know will take a few hours, rather than taking all day (or even days) to get bushels of tomatoes or other vegetables canned.

    We just canned diced tomatoes seasoned with Italian seasoning and a batch of Mexican seasoning!
    I used lemon juice also !

    for people with hard water put a splash of vinegar in the pot to keep hard water rings from forming on the pot.

    You fold the handle down on the basket, and that keeps the jars from falling over.

    i have not canned my tomato's yet they are in the freezer until it gets a bit cooler in my area its 101 degrees today

      I know, if I had freezer space I would freeze everything :) It is so hot to can. Much better in pressure canner so it doesn't take as long.

    I might miss my big ole garden but not the work at my age now. Always used a canner for lots of tomatoes and green beans. Then when the garden was gone I used water bath method for smaller batches. Never bought from grocery after the garden days but went to the local farmers markets for fresh fruits and veggies. You couldn’t fool my kids when it came to my home canned green beans. When we’d run out for the year I’d slip in some canned. My son wouldn’t eat them and was indignant that I even tried to pass them off. LOL 😂

    Tammy, if you cut an “X” on the bottom end of the tomato before you put them in the boiling water, the skin peels / slips off easily after they are put in the ice water. That’s an alternate way to do it instead of cutting a slice off the stem end.

    You can dehydrate those skins to make tomato powder.

      I dehydrated a bushel of tomatoes and made a smoothie with the skins- tastes just like Campbell's tomato soup, the skins are well worth saving!

    Our garden is a little behind you guys, when our tomatoes are ripe I will can them. 👍
    We made some refrigerated pickles yesterday, there's a sense of accomplishment when we look in the refrigerator. Do you have refrigerated pickle recipe ?

    If you please finally South Carolina shrimp grifts Tennessee Nashville hot chicken Texas chicken fried steak Virginia ham beansoup West Virginia soup beans with corn bread chow chow but as whole cuisine of southern state famous recipes pimento cheese Brunswick hush puppies sweet potato casserole pecan pie biscuits sausage gravy fried green tomatoes please don’t misunderstand me I’m not talkative but the reading writing great help to improve our English thank you for wonderful channel the food is part of culture of country stay safe blessed best wishes for you your dearest ones

    I do not use anything. Just tomatoes 🍅 I just opened a quart jar last week from 2018 Just as fresh as the day they were canned. It’s 2022
