      Mary's Nest : awesome recipe, thank you. Now I have to get some canning supplies 😊. Talking about canning supplies, I went to the links provided in your video information and I noticed that you link everything directly. Did you know that Amazon has a component which you can link all things related to theirs site under a page that you make and when someone opens it they pay the same amount as in a direct link but they give you some money for each item.       Mary's Nest: I can’t thank you enough for this video. I have been searching for a recipe & video that explained canning tomatoes. I always wanted to have homemade crushed tomatoes, especially when tomatoes were in season and being married to an Italian I am always in need of tomatoes :) than store bought!

    In Italy they don't even use a canner. They just put the very hot sauce or crushed tomatoes in the jars, turn them upside down and cover them with heavy blankets and let them cool over night under the blankets. They've been doing that for centuries.

    If you are doing lots of tomatoes, your ice will melt quickly in the ice water bath.. Try freezing water in clean plastic milk jugs, clean orange juice cartons, etc. Then you have nice larger blocks of ice that will not melt as quickly in your ice bath, and you can do several rounds of cooling without emptying your ice cube bins.

    I use a teaspoon of vinegar instead of lemon juice for extra acid! I also use a teaspoon of sea salt in canning jar! Have done this for years!

    this is the BEST how to on this. you are a rare excellent canning teacher in that you follow safety procedures, but still make it clear and understandable. I find that usually the only people I can follow are doing things you aren't supposed to.... thank you so much! planning to gift some crushed tomatoes from my garden for xmas this year and now I feel ready

    Good Morning Mary. I just came across this video today. I’m using it as a teaching tool for getting my daughters into canning. I don’t have anything to add because you were very complete in the tutorial. My girls are beautiful grown women now. They are humble which makes them teachable.     Seriously this is the best water bath tutorial I've seen! Thank you for so much detail description! The finger tight tip is very helpful, and I would have just naturally tipped the jars when removing to pour off that little bit of water. Thanks!

    I so appreciate your explanations, about the oxygen & finger tight. I tried canning decades ago however, the can ing book stressed botulism can happen. I was scared…

    Outstanding tutorial. Listened to it a few times to get the gist of tomatoe canning. Canned 10 quarts but made the mistake of tipping two quarts upon removing them from the canner: not bad, though, for a first time effort. We shall see how the quarts sealed in 24 hours....

    Hello Mary, thank you for your beautiful explanations and tutorials. I absolutely love your videos. I have a question. I followed your process and at the end of this process my crushed tomatoes seem to have separated the tomato and water. I was wondering if this is normal or if there is a reason that this has happened.

    Firstly, thank you for your attention to detail. It really clears up a lot of confusion. Secondly, if I don't precooked my tomatoes do I still boil for 45 min in quart size jar? Or do I extend the boiling time?

    Thank you for the video. I am always interested in canning. So far I have made jellies the water bath canner and beans and soup in the pressure canner. Haven't tried tomatoes yet, but I will. Started doing Keto diet, so I need a pantry filled with things that have no sugar added.

And I have another video where I talk about low-carb veggies that are great for using in KETO BONE BROTH. I am going to be looking into making more KETO recipes.     This is an amazing tutorial. I can see now that in my canning efforts in the past I have done so many things wrong. I have a question about when the jars go into the water. I have seen jars covered and covered just up to just below the rim. Which is correct and should everything you can be covered completely with water in the canner?

    Love your videos. I heated my jars in a 200° oven for 20 minutes because my metal wire rack in my water bath canned kept making the water dirty due to being rusty.

    Hello Sweet Mary, Is it true you can add like 3,000 u of Vitamin C and crush it up in place of the citric acid? Love, Tammy

      Also, I have a recipe that calls for adding a little bit of instant tapioca. Is it ok to can an item that has tapioca? or tapioca and a little bit of butter with it?

      Hi Tammy, Those are great questions! You want to make sure that the Vitamin C you are using is 100% Ascorbic Acid. If NOT, do not use when ascorbic acid is required for acidification as in canning tomatoes. As to using tapioca in canning....I wouldn't use it. I think you will be very unhappy with the results. Tapioca tends to gum up and get lumpy during the heating process of sealing the jars. Love, Mary

      Great question. I think that would work as long as yo heated up the tomatoes again. You only want to put very hot food into a canning jar before canning. Also, be sure to check with the National Center for Home Food Preservation: nchfp.uga.edu/ Love, Mary

    You really are such an amazing teacher, an absolute natural. You are so thorough and clear. I really appreciate you sharing your knowledge, especially since I don’t have any family members to teach me these things. Learning through watching is so much more informative and enjoyable than reading. I have a question, if I may, I understand that oxygen in the jar is something we do not want, but what if we see oxygen in the product after it has been sealed ? For example some chutney that I made had some small bubbles in it even though I did de-bubble and it did seal. Another time a jar of pickled tomatoes had tiny bubbles all around the tomatoes after it had sealed. I’m a bit concerned. Thank you so much.

    I followed your directions to a tee. My question is whether or not it's normal for a few bubbles to come up? I know some of it is air between the band and the jar, but I think some of it is air from inside the jar. From what you said, I might assume this is OK because the lid is not air tight until a vacuum is achieved - is this correct? I even noticed a tiny piece of tomato in the water - whether or not that was from inside the jar I don't know.
    For tightening, I tightened lightly by hand until it stopped, and then approximately a 3/4" turn after.

    What if you don't hear the plink or see the indent in the lid? Does that mean it didn't seal? I also see pockets in the jar without the relish/sauce I made. Does that mean there's still air in it and unsafe for shelf? Thanks so much!

    I have just watched your video on canning crushed tomatoes before I actually get started. Thank you for explaining everything. I have one quick question. When you say you remove the rings after the jars have cooled 24 hours do you mean you actually remove the rings and store the jars just with the lids or do you mean you loosen them a bit. Sorry maybe I am over thinking things. Thanks

      So happy this video was helpful. Yes, you completely remove the bands/rings. The lids should be very tight and stay in place all on their own. If not, the jars will need to be re-canned or refrigerated. Love, Mary
