I found that a alcohol stove with a simmering ring works pretty good. I use a non stick titanium pan so low heat is required. It's not for a group or anyone in a hurry but for a easy going solo hiker it can't be beat.

Love it! Easily adaptable into a quesadilla, which gives the advantage of being more portable; you can make them ahead of time to eat as a trail snack.

Watching on before a bikepacking trip with my son and you've inspired me. This is exactly the sort of food he and I love. I also highly recommend chilli salt. It improves every savoury based dish. I am going to approach the supermarket with a different minds eye about what is infact possible.

Laughing Cow cheese wedges are awesome. They don't need refrigeration. And as much as I dislike like them, American cheese singles can also go refrigeration for an extended time. Package pepperoni slices are good with Laughing Cow and tortillas too.

Another great recipe and very practical! Thanks Chef. By the way the best tasting single serve coffee packets I’ve found for camping are from Little Amps. Lots of flavor choices and decaf (ugh) too.

Suggested adds… Taco Bell sauce packet… actually the salsa packages you get when you order a taco pizza from Pizza Hut… I bet you could strain them out a bit and then rehydrate on the trail. That would be awesome!!!! (Don’t dehydrate the taco pizza salsa pack, I tried that already and it was not successful)

Love it! I'm a fan of the Upton chorizo seitan, personally.
Just going to tell my trail taco, that requires no actual cooking.
Ingredients are:
-cooked rice (maybe rice with beans if you find it) or bag boiled rice, maybe add some taco seasoning.
-any meat, either cured meat or preserved like chicken in a bag.
-cheese, self stable or normal depending on environment
-lime (lime should easily keep long enough for you to use it all)
-hot sauce
-some torilla chips if you want crunch
And frankly you could take other fresh stuff like avocado, spinach, or peppers, these all keep for at least one day, couple if weather is not hot. Bean salsa is also really good ingredient, just take it from the jar and keep it in a bag for weight and size savings.

If I just bought a store bought refrigerated brick of say Tillamook cheddar. Is that alone pack-able or is there a certain kind/type/brand, or something that needs to be done to it?

Trail conditions will dictate how long items last. Look to sharper, aged or dryer cheeses to last longer. I have good success with cheddar lasting 3-5 days. Check out this video for an in-the-field test: ua-cam.com/video/TOUYAZp3nYY/v-deo.html
also, on trail try not to touch it with your hands or anything dirty. touched spots will mold first! keep it clean and wrapped and it lasts surprisingly long.
That looks like it would be good with some cheeto's and a salsa packet.

I'm currently using a MSR Pocket Rocket (v1) along with the Lowdown Remote Stove Adapter, and I'm wanting a stove that is able to spread the heat more on my SeaToSummit Alpha Pot (1.9L).
Stove question:
I'm wondering if you know if the Pocket Rocket Deluxe would do a good job dispersing the heat to prevent burning on the pot?
I've seen your video on stoves, but I really like my pot, but I'm having an issue with it burning in the center.

It will help slightly but not much. You will most likely need something with a larger surface area. Look into MSR whisperlite, windpro, or GSI glacier for sizes that should help get the flame to more parts of your pot

How long can you keep a hard cheese on the trail before you need to worry about it going bad?
Depends on your trail conditions but I have had them last 3-5 days. Drier cheeses like Parmesan and manchego can last a bit longer

not sure about Scotland but I usually need a special order from Amazon
