This fondant was pre-colored by the manufacturer. We did not add any food coloring to the product. We do carry a Burgundy food color in the Alan Tetreault Select gel color line.
Technically they could. My concern is that if they dry out even a little, they will crease or break as you try to fit them in on the side of the cake. The fresh fondant ruffles make it much easier to apply them.

This was Satin Ice Burgundy fondant but you must steam it at the end to get that nice rich color.
