- hello! here’s a classic vanilla cake recipe that’s older than your grandmother ;) she’s still got it though! this recipe is vegan, dairy-free, egg-free, nut-free, and soy-free. it’s also super easy to make without compromising on flavor and texture. this video will also tell you how to use this recipe for cupcakes!
recipe for one 8-inch (20 cm) cake, or 18 cupcakes:
ap flour: 240 g / 2 cups
sugar: 220 g / 1 cup + 2 tbsp
salt: 1/2 g or just a pinch
baking soda: 5 g / 1 tsp
water: 200 mL / 3/4 cup + 1 tbsp
white vinegar: 2 g / 1/2 tsp
vegetable oil: 35 g / 1/8 cup + 1 tsp
vanilla extract: 5 g / 1 tsp
350F / 175C
35-40 minutes for cake
19 minutes for cupcakes with liners, 22 minutes for cupcakes without liners

I am allergic to soybeans so I should avoid vegan butter (including lecithin), soy milk most vegan recipe

Hello! I generally use canola oil or safflower oil. You can try using refined coconut oil if you want to be extra safe :) if you keep it cool it will turn thicker like butter which can help you in a lot of baking situations. I hope your cake turns out great :)

Hi! I haven't tried it personally, but in theory you should be able to :) just omit the baking soda and salt in this recipe and replace the plain flour with the self raising flour. Let me know how it goes :)

Hi! The vegetable oil refers to pretty much any kind of liquid oil, such as canola or safflower oil. You can also use melted refined coconut oil as well. Hope this helps! :)

Hi! You might have put in a little too much baking soda. Double check the amount that you're putting in :)

Oh ok, did the cake rise properly? If it didn't then the baking soda might be old. Otherwise it might be the brand you've used?
pinch salt and 200 ml those stuff i dont understand, i only know spoon and cups lol. if you could include them in description it will help

Yes, you can! I usually use a one-to-one gluten-free flour mix.
Can l use coconut sugar ?
Hi! You can use coconut sugar, however I'll warn you that you will definitely taste the distinct flavor of coconut sugar. If you like the flavor though then go for it!

Can i use oat flour?
Hi! For gluten free baking, it's better to use a mix of flours (i.e. rice flour, oat flour, sorghum, tapioca, etc) to get a light cake. Using only oat flour will result in a very dense cake. Hope this helps :)
