I ferment to make vinegar, not wine or beer. Is there an accurate reading that I can get without doing an initial reading (specific gravity reading) and only doing a reading after I've completed the aeration of the ferment?

Left is, middle is, the right is?
Left is Specific Gravity, Middle is ABV, Right is Brix
