  • ingredients:
    1 cup Jaggery (Gudh)
    9 Cardamom pods (Elaichi)
    1 teaspoon Ginger powder (Sunth powder)
    1 Nutmeg (Jaifal)
    1 teaspoon Poppy seeds (Badishoap)
    250g boiled Chickpeas (Boil chana daal)
    1 cup Wheat Flour (Ek katori Wheat Flour)
    2 tablespoons All-purpose Flour (Maida)
    A pinch of Salt (Ek chutki mith)
    Instructions:
    1. Prepare the filling:
    Cook 250g boiled chickpeas in a pressure cooker with a little oil and water until tender. Add a pinch of turmeric powder and cook for 3 whistles on medium heat, then simmer on low heat until soft.
    In a separate pan, roast 1 cup wheat flour and 2 tablespoons all-purpose flour until golden brown. Add a pinch of salt and a pinch of sugar. Gradually add water to make a dough. Set aside.
    In a mixer jar, grind together 1 teaspoon poppy seeds, crushed nutmeg, ginger powder, and seeds from 9 cardamom pods to make a fine powder. Mix this powder with melted jaggery and the cooked chickpea mixture. Stir well until everything is combined and aromatic. This mixture is your filling.
    2. Make the flatbreads:
    Take a small portion of the dough and flatten it into a disc. Place a portion of the filling in the center and seal the edges to form a ball.
    Flatten the ball gently into a disc and roll it out into a thin flatbread using a rolling pin.
    Heat a griddle or tava and cook the flatbread on both sides until golden brown, brushing with ghee or oil as needed.
    3. Serve hot and enjoy the Holi special sweet Puran Poli!
