This is how authentic Puran poli is made, but at my home, my grandmother passed the recipe to my mom and it's very different. The Puran of my mom literally tastes like a smooth icecream and I just end up eating the filling only ❤️ i miss my home now. Hats off to you chef

Hi tip for u 1. Always soak chana dal for Atleast one hour so that ur puran poli become soft and dal cooks fast 2. Do add suntha powder to puran it give nice taste and aroma always if u keep this puran in freeze it stays long for Atleast fifteen days 3. For kataci amti never put garam masala in traditional kataci amti method is. For vatan roast till dark brown onion, garlic and dry coconut only. Later on frying Pan add oil add crushed one or two garlic, curry leaves hing powder, turmeric, red chili powder, vatan cook till oil oozes out, now add water drained from dal also add gud to enhance taste, adjust the consistency u want sprinkle coriander and salt as per taste that’s it while serving add lemon juice have it with boiled rice it’s yummy taste

What an insight to Maharashtrian cuisine! Never knew the way the dishes are prepared. I am from Karnataka, and we call Puranpoli as holige or obbattu. The preparation for this is slightly different, but as you mentioned, we all have variations in our own homes. What a surprise of a dish to see on this channel! And at home, we don't prepare any dishes with onion or garlic for festivals, so I was not expecting to see them being used in the Kata chi aamti. Mom usually prepares a rasam called obbattu-saaru, which uses the mashed puran as one of the ingredients. Love how every dish sounds similar but is slightly different. Wonderful diversity! Another variation is called a cut-saaru which is prepared generally (not a festive dish), and mom did mention that certain variations have Onions and Coconut (she had used only garlic). I never knew it was one of the dishes served during Holi! And dipping Puranpoli in this, completely unexpected! I'm just amazed by the similarities and differences between the two states, and feel happy to see the diversity! Thank you for such beautiful recipes, chef!
Puran poli u made using Jaggery but there is also other way in which sugar is used plus adding angeer gives a great texture and taste would love to see that version of puran poli someday....much appreciate ur work ....love from Maharashtra ♥️

Every Maharashtrian has his heart filled with joy after this, Puran poli is so satisfying to eat and very technical. This is how authentic Puran poli is made, but at my home, my grandmother passed the recipe to my mom and it's very different. The Puran of my mom literally tastes like a smooth icecream and I just end up eating the filling only ❤️ i miss my home now. Hats off to you chef

Our version of katachi aamti uses the sweet puran with garlic tadka so, it's a hot and sweet medley of flavours. It is served with Ambemohor rice and Desi ghee. ❤️

Hi tip for u
1. Always soak chana dal for Atleast one hour so that ur puran poli become soft and dal cooks fast
2. Do add suntha powder to puran it give nice taste and aroma always if u keep this puran in freeze it stays long for Atleast fifteen days
3. For kataci amti never put garam masala in traditional kataci amti method is. For vatan roast till dark brown onion, garlic and dry coconut only. Later on frying Pan add oil add crushed one or two garlic, curry leaves hing powder, turmeric, red chili powder, vatan cook till oil oozes out, now add water drained from dal also add gud to enhance taste, adjust the consistency u want sprinkle coriander and salt as per taste that’s it while serving add lemon juice have it with boiled rice it’s yummy taste

I remember when my sister and I used to go to Sarita Jangam aunty to learn Marathi during our childhood, so at the time of festive occasssions like Ganesh Chathurthi and Deepawali, पुरण पोळी, आमटी आणि वरण भात तर नक्कीच असणार. What an insight to Maharashtrian cuisine! Never knew the way the dishes are prepared.
I am from Karnataka, and we call Puranpoli as holige or obbattu. The preparation for this is slightly different, but as you mentioned, we all have variations in our own homes. What a surprise of a dish to see on this channel!
And at home, we don't prepare any dishes with onion or garlic for festivals, so I was not expecting to see them being used in the Kata chi aamti. Mom usually prepares a rasam called obbattu-saaru, which uses the mashed puran as one of the ingredients. Love how every dish sounds similar but is slightly different. Wonderful diversity!
Another variation is called a cut-saaru which is prepared generally (not a festive dish), and mom did mention that certain variations have Onions and Coconut (she had used only garlic). I never knew it was one of the dishes served during Holi! And dipping Puranpoli in this, completely unexpected!
I'm just amazed by the similarities and differences between the two states, and feel happy to see the diversity!

Puran poli u made using Jaggery but there is also other way in which sugar is used plus adding angeer gives a great texture and taste would love to see that version of puran poli someday....much appreciate ur work ....love from Maharashtra ♥️
