Man. That's a 5 star Filipino foods presentation. If this is how they present our food all over the world; our food will be going mainstream. 5 star presentation
Fine dining presentation is ok in some cases, but i think Filipino food shines best rustic style. It’s a shame that only instagramable food gets more love. Then there’s the problem of losing its identity. If you plate adobo beautifully, can you even tell that’s adobo? Are you sure it’s not lamb braised in red wine reduction or some fancy stuff? When you compare it to a pile of brown meat glistening in soy sauce with bay leaves still on and whole peppercorns visible and whole eggs dyed brown from the sauce, maybe a side rice, which it should be eaten with. There are ways to plate food without trying to copy European style too much. Maybe embrace the roots of the dish. Place it on banana leaves. Instead of plain rice, have puso on the side. Adobo piled neatly and appetizingly on the side with minimal garnish that make sense like maybe some bits of fried garlic and bayleaves placed strategically so it can be seen but be removed with ease. Maybe use the adobo sauce to make adobo rice and fry the meat. I get why they’re doing this but let’s not forget that our neighboring countries’ cuisines are widely accepted without trying to be fancy. Ramen is just ramen but presented nicely by arranging the ingredients. Pho dont bother with arranging ingredients nicely, just go as is. Lots of curry variations are just stew-type mix on a serving dish with minimal garnish. I’m glad this is working for them though. Can see the risk of doing things differently, it might be too foreign for them. Familiar things just feel more safe.
Mainstream and 5star are complete opposite ends of the spectrum. Mainstream means you want to cater to the masses. 5star dining caters to higher end clientelle.
Yes exactly, a 5 star presentation, go to the Philippines, I have been to Cebu, Manila, Gen San, Cagayan De Ora, Iloilo, and various provinces, and its not like that, 😂

That is the reason why we don't have a "national food" because every nook of the Philippines have different variations,style of cooking a certain dish like ADOBO,SINIGANG,LAING na GABI,TINOLAMG MANOK,etc. For example,the ADOBO.In BICOL,they cook it without a SOYSAUCE.They just put rock salt all over the sliced pork belly and cook it under low fire.Duration of cooking depends on how many kilos of meat you've cooked.When its done,the meat sauce is just the fats of the pork belly,thus they call it,"ADOBONG PUTI!" This ADOBO style of cóoking lasts for days,weeks,even months. While in some parts of Visayas and Southern Luzon,they cooked ADOBO by marinating first in vinegar,lots of garlic,peppercorn,bayleaf,and several folks add onions to it.After marinating,they boiled it,until the vinegar had evaporated,where the fat of the pork had already oozed,that's the time when they add soy or oyster sauce.Another 2 or 3 minutes of simmering is needed so that the soy/oyster sauce & the fats of the pork will combine.And this ADOBO is called,ADOBONG TUYO(DRIED ADOBO) Same with other Filipino recipes,so much variations of cooking style as well as the ingredients.But,it all boils down to the taste.No matter what manner of cooking style,at the end,the Filipino taste always remains. Because so many Fil Ams make fake Filipino and most westerner can tell the difference between real and absolute fakeness. Innovation is tolerable, especially when it does not seek to decieve the customers. A little twist in the recipe be acceptable. But when the food is yet to be known, authenticity is key. Adobo with condensed milk in Los Angeles is a great example of why Filipino food becomes a joke.

Aaaah I miss Oslo. I was just there in November '23 on a solo trip. I was planning to stop by KainOslo but got overwhelmed by my short schedule. I stayed at Comfort Grand Hotel which was perfect considering I took the train going to Stockholm after. Next time. More Vegan options please.

Sometimes this is the way to share Filipino foods to different culture or nationality. Especially in many rich European countries. That's why it's not surprising that 80% of their customer are non Filipinos. Madami sa mga Pinoy hindi ma busog dyan or not comfortable sa ganyan na setup.
Nothing compares with authentic Filipino dishes so I learned to cook at home. It’s difficult to have the Filipino foods abroad. It’s not the same. But you have the shed of it
@@rondigao sinigang is not cooked for parties. In weddings and bdays, clear soups, which most Filipino soups are, not served in banquets. Unless those eat all you can buffets. 99% of Filipinos do not know why Lumpia is served in parties. If the party has a caterer, they will put Lumpia in the banquet. Filipino who are ignorant of their own culture think that is the tradition or culture. It is not. Go to the parties of people with money, the caterer will not dare put Lumpia in the banquet. Now, lumpia is made common in parties. The more traditional lumpia served in parties is actually made of fish. Because in some regions, there are many muslims. They cant eat Lechon. So the Lumpia with fish is something special. Very few Filipinos have heard of Lumpia made of fish. I think its tuna or milk fish.
I just returned home here in Texas from Oslo 2 days ago. I got sick and is still is. Was confined in the hotel for days. Cancelled all my prepaid escapades including a flight to Bergen.
@@rondigao thanks for your concern . i was scared to death being stuck in a European hospital ,because of medical expenses and at the same time,not being permitted to fly back home because of possible contagious disease. Finally ,made it back home ,with numerous stares on each flights ,due to constant coughing . there is always a next time .Lesson learned not to travel in the Fall for my health condition and to layer up ,clothes wise !

In abroad most are looking for the authentic dishes like authentic Spanish, Thai, Vietnamese. Because if it taste improvised dish, though it’s very tasty, something is missing. I would go Max’s, red ribbon. They are the real Fipino but sad in Europe like UK & Norway, it’s gonna be improvised🤣 or catering from home cook Filipinos

Finally ,made it back home ,with numerous stares on each flights ,due to constant coughing . there is always a next time .Lesson learned not to travel in the Fall for my health condition and to layer up ,clothes wise !

In abroad most are looking for the authentic dishes like authentic Spanish, Thai, Vietnamese. Because if it taste improvised dish, though it’s very tasty, something is missing. I would go Max’s, red ribbon. They are the real Fipino but sad in Europe like UK & Norway, it’s gonna be improvised🤣 or catering from home cook Filipinos
