Another wonderful classic!! I was taught to make these 45 years ago by a lovely Korean lady who owned a Mexican restaurant. She served them with a ladle of the sauce you made and a bit of shredded cheddar and jack cheese on top. I am so happy to have your book because I never wrote down any of her recipes and people ask me for them occasionally. Your food is very close to what I learned from her and it brings back great memories! Thanks so much!!

I’ve had these stuffed with steak n cheese. The beef flank steak was prepared with a nice smokey chipotle powder and the stuffing finished in a mix of cheese, dates (or raisins) onion and clearly some love. I believe they were fried quickly and finished in the oven. Served with a little sharp white cheddar sauce. They were the specialty of a family restaurant in New Mexico and I was surprised to find them again (very similar) in Alabama. The poblano is delicious and the meat with the dates or raisins is difficult to describe (tastes almost game like). Unusual and delicious! You video made me hungry 👍
I worked at a Pancho's Mexican Buffet in my early 20's. Had eaten at them since I was a kid in Texas. I would stuff myself on Rellenos. Theirs was similar to yours-simple. Seeing as I did not work in the Kitchen I could never 'Quite' figure the coating-knew it was eggs beaten for a long time [[4 Gallon stand-mixer]]. This answers that question. Never found any as good as a simple Buffet-even in expensive restaurants. Always covered in some sauce and stuffed with beef. NOW I can do 'em like I like 'em-cheese filled and slathered in melted cheese or just plain! Gracias!
My Mexican fiance taught me how to make these... we toast on griddle place in plastic bag for several min. Take put remove skin, slice open de seed them. Fill with slices of Queso Fresco close with tooth picks. Prepare eggs whites, stir in a couple yolks dip in yolks then in all purpose flour fry in oil. I also make authentic Mexican rice and serve with corn tortillas. This is one of my favorite things eat definitely. . .... so easy. Also , have learned to make many other delicious authentic meals. I love poblanos.

I have been wanting some chiles rellenos for the longest longest time. I would always order them at Mexican restaurants but they were not what I was looking for. No flavor just blend. But now watching you make this I'm more than sure that these is the recipe that I've been looking for. Watching your video I love how the coating didn't come off the chile!! I love them,I do half dry with rice.and a couple in soup I blend tomato and union add salt fried a little union put the tomatoes juice put a couple of the chiles rellenos and is delicious.takecare
Something I just figured out in the last year. I don't have gas, I have an electric stove. You can still roast those chilli's over the burner with any kind of wire rack, like a cooling rack! Works perfectly and can't believe hardly anyone ever mentions this neat truck!
A tip that my mom shared is that after roasting the peppers you can place them back in the plastic bag that you usually use from a grocery store and let them sweat in there. After the 15-20 minutes you can use the bag to rub the skin off.
I like them with a ranchero sauce that has pieces of veggies like onion, bell pepper, celery, tomato. I never made them with potato and cheese, that looks really good. My son doesn't like cheese, so I have made them with ground beef with small cubed potato. This looks delicious.

My mother didn't cook much (she didn't like to) but I remember her making me these when we had food. She didn't dip hers in the egg, she would put the egg mixture in the oil with a spoon, place the chili on top and then spoon more of the egg mixture on top of it to cover. I don't know why she did that this way. It turned out great but there were only a handful or so of recipes that she knew how to make well. Scalloped potatoes and abondigas soup were two others. Thankfully my grandmother taught me everything I know about cooking.

These look so good! The best Chile Rellanos I’ve ever eaten were from Chuy,’s restaurants in Austin TX. Shrimp and white cheese with the crispy crust covered in an amazing green tomatillo sauce. I could fly there just for their rellanos! I’m still trying to perfect the crust on mine. Anxious to try these!👍

I don't know why she did that this way. It turned out great but there were only a handful or so of recipes that she knew how to make well. Scalloped potatoes and abondigas soup were two others. Thankfully my grandmother taught me everything I know about cooking.
She also used to clean spoon to flip the oil over the egg while it was cooking on one side so that it was easier to flip and it helped cook the top.
@@kamikazitsunami it's the preferred that most Latina cooks use. No need to flip 'em if you spoon or splash them with the fry oil.
