- Easy naan pizzas
Serves 4 | Prep 10 mins | Cooking 30 mins
Ingredients:
550g Coles Made Easy Slow Cooked Lamb Shoulder in Garlic & Herb Sauce
2 x 360g pkts Coles Kitchen Garlic Naan
200g Coles Tzatziki
120g Coles Australian Style Fetta, crumbled
1/3 cup (55g) pitted kalamata olives, halved
1/2 small red onion, thinly sliced
1 medium vine-ripened tomato, chopped, or 200g red Perino tomatoes, halved
Mint leaves, to serve
Lemon wedges, to serve
Method:
1. Preheat oven to 200°C. Place lamb and sauce in a baking dish and cover with foil. Bake for 15 mins. Remove foil and bake for a further 15 mins until lamb is golden brown and heated through. Use 2 forks to shred the lamb.
2. Meanwhile, heat a chargrill on high. Cook naan for 2 mins each side or until lightly charred and heated through. Cover with foil to keep warm.
3. Arrange the naan on a serving platter and spread with tzatziki. Top with lamb, fetta, olive, onion and tomato. Sprinkle with mint and serve with lemon wedges.
