I LOVE the look of these too shaders I've always wanted to do something like this in blender but never knew how. For me it's always been low poly or photorealism. I can't wait to try my hand at making some cool toon looking renders! I love the idea to use nintendo games with this!

Also the Shy Guy mask issue can be worked around with a data transfer modifier to a smooth mesh to get cleaner shadows. @aVersionOfReality has a great video series on how it works and how to do it even more exactly with GN nodes (for more complex shapes/deforms). I found it when I wanted to understand the modified in your Ghibli tree tutorial!
