Another reason that I just thought of. When we get to that mixing step, this is also when you pull the pellicle out. It’s easiest to pull the pellicle out with your hand, and since your hand is already in there, may as well use it to mix.

Why do you use your hand to stir?
Good question! Mainly because I’m lazy and don’t wanna dirty up a spoon. A spoon is fine though.
