Considering the high volume of usage they undergo each day, it's possible that the airstairs in the video were not extended because they were undergoing maintenance or repairs. If capacity is 200+ then it needs an extra crew member, so 197 means that it is just 4 crew like on the 800 to keep down costs.

Ryanair flies 700 daily flights with 737 MAX 8s and has never had an issue. Flying Ryanair is perfectly safe.
