    Here’s what you’re going to need:
    3 packages agar agar (1 1/2 tbsp)
    1 cup water (split into two parts)
    1 1/2 cups granulated sugar
    1 cup corn syrup (light is preferred)
    1/4 teaspoon salt
    1 tablespoon vanilla extract
    Confectioners' sugar, for dusting (you need a good amount so the marshmallows don’t stick)

    For people that didn’t know marshmallows have gelatin
    Gelatin is a protein obtained by boiling skin, tendons, ligaments, and/or bones with water. It is usually obtained from cows or pigs.

      Yup. But there are ways around it, such as pectin and agar agar.

    i wonder if one could do this with something like coconut sugar or monk fruit and agave....?....It would have to be raw agave....Supposedly the cooked agave is equivalent to corn syrup, which apparently is really bad for health.....

    I went to the website and tried the recipe, and it didn't work at all! I was whisking it and it got to a point where it wouldn't get any bigger, thicker or whiter.

      Nope. But you can make a syrup out of granulated sugar (search for corn syrup substitute recipes), or any syrup like golden syrup or rice syrup.

      When I make them I let them sit overnight, but some people give them less time. They don’t usually need to be chilled

      Oh I didn't know she added agar agar. She only mentioned the ingredients for the sugar boil then immediately started whipping away, so I just assumed that she whipped a pure boiled sugar mixture.

      It's on their website, or
      1.5 tablespoons of agar agar
      1 cup of water (split in half)
      1.5 cups on sugar
      1 cup of corn syrup (you can use a substitute such as rice or golden syrup, or search for a recipe where you can make your own sorn syrup sub.)
      1/4 teaspoon salt
      And 1 tablespoon vanilla extract.
      Instructions:
      1. Put agar agar and 1/2 of cold water in a bowl that you'll be using to mix in later.
      2. Add corn syrup, sugar, salt, and the rest of 1/2 cup of water into a large saucepan. (Make sure to use a candy thermometer)
      3. Mix until mixture dissolves (they said to use medium heat, but I find my stove too hot so I used low).
      4. After mixture dissolves, don't stir anymore! (If you stir after it already dissolves, you could get a "cracked" result.) Turn the heat to high, or in my case, medium. Heat until mixture reached 240⁰f
      5. Slowly pour mixture into agar agar with a hand or stand mixer on low, until it comes together, then, turn mixture to high for 10-15 minutes.
      6. Pour mixture into a cake pan, or container that is COATED with TONS of powdered sugar. Let sit overnight.
      My mixture didn't turn pale and fluffy like theirs did, so I added two duck egg whites, and it worked. My batch hasn't set yet, but let's hope it works because I've failed so many other recipes!
