Ingredients for this recipe:
For the Sauce:
• zest of 1 large orange
• juice of 2 large oranges, about ¾ cup total
• ¼ cup water
• 3 tablespoons Shaoxing wine
• 3 tablespoons rice vinegar
• 2 tablespoons soy sauce
• 2 tablespoons oyster sauce
• ¼ cup sugar
• 1 optional hand-ground mild chili or ½ teaspoon red pepper flakes
• 2 finely grated garlic cloves
• 1” chunk of peeled, finely grated ginger
For the Chicken:--
• 2 pounds boneless skinless chicken breast cut into 1” cubes
• 2 tablespoons Shaoxing wine
• 1 tablespoon sesame oil
• ¼ cup water
• 2 large eggs
• ½ cup all-purpose flour
• ½ cup cornstarch
• 2 teaspoons coarse salt
• ½ teaspoon ground white pepper
• cooking oil
Serves 6
Prep time: 25 minutes
Cook time: 15 minutes
Procedures:
1. In a medium-sized bowl, add the orange zest, orange juice, water, Shaoxing wine, rice vinegar, sugar, soy sauce, oyster sauce, and optional chili flakes and mix to combine. Set it to the side.
2. Cut the chicken into roughly 1-inch cubes. Please place them in a large bowl.
3. In the bowl with the chicken, add in the Shaoxing wine, sesame oil, water, and eggs and mix until thoroughly combined.
4. Next, mix in the cornstarch, flour, salt, and white pepper until combined. It should be a wet batter like Tempura.
5. Add about 1 cup or so of cooking oil to a large wok or non-stick skillet and heat over medium heat until it reaches 350°.
6. Place in individual battered chicken pieces at a time until the pan is full without getting the chicken to close to one another to avoid clumping.
7. Cook the chicken for 1 minute before using a slotted spoon to move the chicken pieces around and cook for a further 2 to 3 minutes or until lightly browned and cooked throughout.
8. Repeat the process by cooking the chicken in batches and draining on a plate with paper towels.
9. Once the chicken is done, drain all but about 1 tablespoon of the cooking oil, and over low to medium heat, add in the garlic and ginger and stir-fry for 30 to 45 seconds or just until fragrant.
10. Pour in the orange sauce and turn the heat to medium.
11. Once the sauce begins to gently bubble add the slurry 1 to 2 teaspoons at a time until it becomes silky and thick.
12. Place in the cooked fried chicken and toss until coated.
13. Serve the orange chicken with an optional garnish of sesame seeds. - Навчання та стиль

When I was a teenager there was a Chinese food restaurant my family would go to that had an amazing orange chicken recipe. The chicken was super tender, had a non, overpowering orange flavor. Had some kind of long dry chilis in it. And a good taste of garlic. Was not at all crispy. The place closed down and Ive never been able to make it or find anything like it. Some of the best food I’ve ever tasted in my entire life.

I saw a recipe for orange chicken years ago that used Orange Marmalade and Low Acid Orange Juice. and that was it.

This is definitely not as sweet as that. If I actually put out their recipe, people wouldn’t make it because they’d be shocked how much sugar is in it. This one to me is perfectly balanced.

I wanted to, but when I told my family what I was going to make, they said they wouldn’t eat it if it was chicken thighs lol. Thighs and drums are hands-down, the best meat on the chicken.
Most Chinese restaurants will not use wheat; only corn starch. Better texture. Double fry.
You can toss your orange peels in the sugar and let it sit on the counter for three or four hours and pull more of the essential oils out of the orange peel, sort of like you would do making country style lemonade

Don't think Orange Chicken was invented by Panda Express in 1987 hahaha! I was eating it in at least 1968 when I lived in Korea. We ate it at restaurants, and my mother made it at home.

Added all the sauce ingredients together at once by accident and probably missed a little bit of nuanced flavor but it was still good. Ill be making this again to dial in the flavor. Also, this was my fist time frying in the wok and i liked that. I cant seem to get my wok seasoned black though.

In California we buy Eqrthquake insurance that is administered by the State, not insurance companies. This is in addition to any fire, or other homeowner insurance we buy. Due to recent fires, they are thinking of doing the same with fire insurance by forming an insurance fund with the State as the administrator. Hello...I'm sort of new to cooking, and have a question....after you've cooked all the chicken, the leftover flour/cornstarch mixture, is that the "slurry"? AND its added to sauce at the end to make it a little thicker? Like I said, I'm a beginner, maybe add to the cooking instructions to "set leftover mixture aside". I can see myself just tossing this bowl in the sink after chicken is cooked, thinking it's not needed, because it doesn't say. I apologize for just throwing this out,(the suggestion, not the slurry) this is why a recipe should be read through before cooking...thanks so much.

I haven't even started watching but did you velvet the chicken? A little bit of cornstarch and some water soak your chicken bits in it for like 15 minutes max then you coat it and cook it and your chicken will be so juicy and so delicious oh wait I think you add it's not cornstarch and water it's baking soda and water then you toss the chicken that after its rinsed and everything in cornstarch thin layer of cornstarch then you can do the dipping and cooking
