I didn't hear you mention that the some high limits have a reset button. So it's not always necessary to replace the high limit, just press the button. On my Hobart CK40 there is a reset button on the high limit. Good video.
Jsuarez - You are absolutely right. I did forget to mention that in this video. Some fryers (Hobart, Pitco, Frymaster/Dean) have re-settable high limits that require you to press the button in order to resume operation. Footnote, if pushing the button doesn't work, you can use the same method in this video to check to see if it is good or bad. Thanks for watching and for pointing this out! I'll be sure to mention that if I do another video on high limits.

Hi I have an imperial fryer and one of my contactors occasionally starts clicking rapidly for a few seconds. The tech support told me its a bad contactor so I ordered a new one and had it replaced. Occasional clicking still happening. Also I check my oil temp to keep it at 350 but at 350 my temperature knob is under 200. Any help is much appreciated. Cheers.
Also it's an Imperial IFS-40-E electric unit.
Both Tpile and Gas valve are brand new never used just installed
I know, I read that. I'm saying I've gotten defective parts many times before. Bad right out of the box. Also double check the wiring to make sure they are all attached to the correct terminals. If you want to send me a few photos I can confirm for you. Info@windycityaz.com
Does the high limit come on a new thermostat control or are they two different parts ?

What is the difference between Limit unit and thermostat? On parts .com , I see them identical except for the dial . The thermostat has a dial , limit does not. Does the fryer have both with two sensor copper wires ? Confusing. please explain, thanks. Fryer is Imperial IFS-40. thanks.

Hi windy City,I've got a Vulcan EF4. I've replaced gas valve because I had no gas to pilot,got that lit,then wouldn't stay lit,so replaced Thermo pile now it stays lit, then replaced thermostat because I would turn on thermostat and pilot would quit....so new thermostat and it does the same thing,get it lit turn on thermostat and I hear a click in the gas valve and Everything goes out!! I'm frustrated. Now I've checked high limit after watching this. Do I leave any wires connected from Thermopile and thermostat while checking Ohms??? Please help me out with this. Thanks Brian
Hey Brian, I've seen this before. It sounds like you might have a defective thermopile or gas valve. Thermostat is easy to check. Remove the wires and check ohms across terminals only. Turn the tstat on and off. My guess is it's fine. Do you have another tpile you could throw in just to double check?

It is possible, but certain parts usually only work with certain "groups" of equipment. I tried looking up that model fryer and there's not a lot of information available since it's not a common brand. If I had to GUESS, I'd say the parts are probably similar to a Royal RFT-50 or Imperial IFS-40, but I can't make any promises on that since some manufacturers vary slightly in their designs. Wish I could help more, I'm sorry! My recommendation would be to buy the cheapest fryer you can find and throw it in storage as a backup. That way when you have issues with your main one you can at least still cooking while you're waiting on the repair. Thanks for watching Andrea.
Hi, on Imperial IFS-40 , if I set temperature to 350, it works perfectly. If I set temp to 400, it works for few minutes then completely shuts off fire and pilot. I have to reignite the pilot . What could be the problem ? Thank you.

I've seen that problem many times. 9 times out of 10 it means that the thermopile is just barely generating enough mV to keep the pilot valve open, but as soon as there's additional load on the circuit (IE activating the tstat) it kicks off. I would start by replacing the thermopile (or testing it if you have a meter that reads mV) since it's the cheapest fix. If that doesnt fix the problem, it's most likely in the gas valve itself. Sounds like a gas flow or air fuel error. Check the burners for clogs, the flame tubes for blockages, and the flue for excessive carbon build up. Once you're sure everything is clean, you will be able to properly diagnose gas flow. Thanks for watching!

A bad high limit could absolutely cause this issue. You can confirm by testing continuity on the high limit right after the unit fails. Thanks for watching!
My Henny Penny fryer pilot turns on but the main burner does not turn on.
Yesterday, a worker drained the oil and by mistake turned on the main burner with empty well(pan) . He realised his mistake soon and he turned off the main burner. But when we tried to turned on the henny penny with oil in, its pilot turns on but the main burner does not turn on. I have tried to reset the high limit as well by pressing red button but still no success. Any advice please?
When you press the red button, does it click? Depending on what model you have, there could be other safeties that need to be reset. Sometimes its in the controller. The drain switch could have been severed or knocked loose during the commotion. Check those things next and let me know. Thanks for watching!
Many thanks for your reply, there is no click noise when I press high limit red switch. I checkes the continuity of high limit as well, it show reading on voltmeter. Also, resistance is shown on voltmeter.
Drain switch looks like OK as it turns the light on.

Hello, my Quest deep frying is having problem keeping the temperature, once it reach the set temperature, if the temp drops afterward, it won't come back on unless it is in MUCH lower temp. but if I lightly strike the gas pipe with a hammer, it turns on right away. Which parts of the failing do you think?
Well, its hard to say. My initial guess is that your gas valve is failing since they often stick and the pipe is connected directly to that valve. However the tstats sometimes begin to stick as well and they are very sensitive. The small vibrations in striking the pipe could be freeing that up as well. A good way to test would be to jump the top two terminals on the tsat momentarily before tapping the pipe. If it turns on, your tstat is bad, if it doesn't its most likely your gas valve. Just make sure you dont leave that tstat jumped, that would just be to test it. Good luck, hope this helps!

Are you sure it's a high limit? A high limit is a switch so usually it has a circuit that it needs to break. Let me know what type of equipment it is on so I can understand a little better. Thanks!

In a Mexican Restaurant if you pay attention to the music
Anets SLG40 - Pilot is lit, then goes out, and wont restart. I press the reset, and it lights up and I turn the tstat up to 325 and it stays on for about an hour, then turns off. I then cannot get the pilot light to stay on. After I release the Pilot switch from pushing it in, the pilot goes out after I release it about half way. I replaced the Gas Valve thinking it was the gas valve, but the same thing happens. I can't get the pilot to stay lit. Is this a Hi Limit issue or Thermocouple & pilot light issue? What do you suggest I do to fix so the pilot light stays on for more then 20-30 minutes?
It really could be either one, unfortunately. My recommendation, if you already changed the gas valve, is to replace the thermopile. If you have a multimeter that allows you to test mV, you can verify this. Otherwise, if you happen to have another fryer you can swap the thermopiles and see if you notice a difference. Have you noticed the temp of the oil getting excessively hot (smoking, smelling, etc)? If you have, then we may have to consider a tstat too. Let me know, we'll see if we can get to the bottom of it.
Is the thermopile and the thermocouple & pilot the same thing or 3 different things?
Thermopile, pilot, AND thermocouple have been replaced. I first tested the pilot to see if it stays on and it did. I then turned on the thermostat to 325 and it fired right up. After about 40-45 minutes, I checked back and no pilot and burners were off. Back to square one!!!
I am wondering if it gets to temp and turns off everything as opposed to just turning the burners off and keeping the pilot on (cycling). Any thoughts?

i suggest you set temperature at 200 then use a temperature probe to see the actual temperature the oil is heated up to
Hi changed the valve on imperial gas fryer but when I put on 350 its turn off the gas

I have a Pitco SG14-JS, pilot goes on as well as burner but in the middle of start up cycle I get HEAT FAILURE and turns off. trips the high limit every time. When first problems started a day ago, it screen read HI with continuous beep. Guessing to replace the high limit?

It does sound like it could be the high limit. Or a problem in the circuitry somewhere. Usually heat failure doesnt occur before the high limit trips, but the SG14 is a very computerized unit. It could potentially be a computer board. If its a double unit you may want to try swapping the board with another unit (its just 1 plug) to see if the problem follows the board or stays in the original fryers. If it follows, you know you have a board problem. Hope this helps! Sorry for the delayed response!

It does sound like a high-limit issue if the pilot goes out as well. The important thing to do is take ACTUAL temp of the fryer oil while the unit is shutting off. If the oil is actually at 350 when everything shuts off, then a high limit is probably the culprit. But if the fryer is getting all the way up to 425 degrees before cutting out (even though its set to 350) then the problem is most likely in the tstat or gas valve. Hope this helps. +Doan Nguyen contactor would have been my first instinct also, but considering that didn't solve your problem I would look at the thermostat. If your contactor is chattering that must mean the coil voltage is inconsistent. And that voltage is going to come from the tsat. Now it COULD be whatever component controls the power before it gets to the tsat too, but it should be easy to check. Test voltage before the stat and after. Try to isolate the power drop that way. +Olly Dawson Well, first off, one thing the fryer WONT do if the high limit is bad is hold a pilot. The multi-meter should be set to "ohms" and have the "tone" turned on. If the meter emits tone on the terminals in the video, the high limit is most likely good. If not, the high limit is most likely bad. Hope this helps!! Thanks for watching!

How do I bypass the high limit
wht89gt - I am sorry, but I cannot advise nor can I tell you how to bypass a high limit. These are safety mechanisms that are nationally regulated by city and fire codes to ensure that the equipment does not start a fire. It is incredibly unsafe to bypass a high limit on a fryer and can be EXTREMELY dangerous because of how flammable the oil is.

+Windy City Restaurant Equipment Repair I replaced the thermocouple onmy Goldmedal 5099ns funnle cake fryer... Had checked my high limit via this tutorial.. and got tone.. but pilot still wont stay lit... cleaned pilot orifice and that seemed to help... but piolt just flickers as I hold in pilot button.. sasafty valve I guess wont stay open... So guess I am unfortunatly going to replace it now.....???... However this Fryer ( Propane ) calls for a 100# bottle where I am useing a 40# would this cause there to not be enough pressure in the lines to either not allow safty valve to stayopen or cause a flickering non working pilot ?

You should be able to find the service manuals on Partstown. They often have the wiring diagrams as well.
