I've tried a similar dish in the oven. I recommend pre-cooking the peppers for about 15 minutes and then put the stuffing in them. It gives it less of a crunch and more cooked throughout it. Time to try it on the smoker now.
Found this in 2022, going to try this during the week this week. Going to use Quinoa instead of rice. Spiralize some Zucchini and use some uncased Bratwurst I have in the freezer. Mix in some Parmesan cheese. A nice protein rich dinner for a person with type 2 diabetes. TY for making this video.

My mom would always bake the the hollowed out pepper shells by themselves first before stuffing them and then fill them & bake the filled peppers a second time. That made for really tender peppers & they were great eating.

We amped up recipe with Rotel Diced Tomatoes and Green Chiles. Used handy Apple wood. Was great and the Rotel added moisture. Thanks, keep up the good vids.
This is a great recipe, the one thing I do is add a little bit of marinara sauce to the mixture before you put it inside the peppers. And of course you can't go wrong with the killer hog BBQ rub.

It seems a lil' Sriracha in the rice mix would work. We like the hotter spices/peppers around here..
Next time try boiling the peppers first to get them nice and tender. It gives a really great texture that you can cut into with a fork.
(The left over filling is bomb with a little brown gravy) vegetarian variant use some beyond meat burger. Though I'd rather have meat
