If you take a paring knife and cut the top out then cut the peppers long ways in half (top to bottom) in half, you will find they are not only easier to clean but easier to eat any type of stuffed peppers.

Curious as to why you cut the bottom off instead of the top?
Random trivia: White pepper is white because the skin of the pepper is removed during processing. It alters the flavor and exposes the white insides.

Cleaning the peppers with scissors was interesting. Usually a spoon should work just fine.

Hey Boys! I’m a shrimp lover and I’ll tell you what, that’s a fantastic dish. Not a chipotle fan, nbd. Don’t have the rig you have but I know I’ll be able to convert that to my 1940’s oven. Never gave that combination a thought but it’s tops on my to do list. Thanks.

I gotta ask...what is "fish sauce" exactly? And what could be substituted for it?
It is not needed and quite frankly nasty. I eat food with it in there because I have no choice such as Pho, but if I made my own Pho I would not include it. Fermented fish head sauce is basically what is it, but you can see why it is not described that way.
Fish sauce is literally just that. Sauce made by fermenting fish. If you don't have access to it, the closest substitute is Worcestershire sauce, it's the same thing, fermented fish sauce, but with some extra seasonings.
Looks fit to eat. Might have to go a tad less on heated peppers for me. Great recipe.

@@bbqpitboys Gloves have their advantages when dealing with hot peppers IMHO. Reduces the risk of getting something of that where you don't want it.

Everything looks good to me except you cut the bottom of the pepper instead of the top. Is that strategic?
