I love it that you are "breaking the rules" with canning. I think the recommendations are overkill. My respect for you just went up even more. 😂
The thing with “breaking the rules” is understanding the reasoning behind a particular rule and then deciding if the risk is worth it or not to you and your family. Everyone’s risk tolerance is different and the canning community is a great example of that.
Sarah, your hair is looking so beautiful with your gray coming through. I let all my color grow off almost 10 years ago and have never regretted it. If you are like me, you will get lots of compliments on your gray hair, more so than when I was keeping it dark. Thanks for a great video!

Another advantage of cooking down tomatoes with skins on, is the pectin in those skins. Helps to thicken your sauces❤

I just made my tomato sauce this weekend and have a funny story…. My blender broke and my spare went to college with my granddaughter so I thought, “no big deal, I’ll use my food processor “, ( I’ve not had it too long). Guess what?! I had tomato sauce all over my kitchen counter! Who knew that liquids don’t do well in a food processor??!! 😂 I’ve learned my lesson and now will be getting a new blender. But this batch of sauce is a bit chunky.

I like to use my food processor but with semi-liquids, I only fill it half way. It takes longer, but no extra cleaning.

An option to grinding up the skins and seeds in your sauce is to strain them out with a food mill and then freeze dry the skins and seeds to be ground into a powder. Love your channel. Lots of useful knowledge.

Check for heat diffuser stainless steel plates so you can use your thinner bottomed pots!! This thing saved me when doing bone broth!

Hi Sara, for the past 50 years I keep a cast iron diffuser on my stove top burner. (Made in Italy and on Amazon) this helps all pots from burning when simmering for long periods of time. Now tell us where you get all your energy from!
I didn't plant tomatoes this year, but I found a basket full of volunteers night before last hiding in some tall grass. I made sauce and it was GOOD. I enjoyed your video.

I love tomatoes, particularly marinara. I Must Remove skin and seeds, because if I don't I get joint pain and psoriasis every time. I love your videos and you Are the ketchup Queen 😂
When I remove jars from a canner, I always set them on a towel like you do, but then I cover them with another towel so they cool slower. I've never had a jar break doing it that way. They also always seal for me.

Glad to hear your using your vita-mi. For years I did the food mill, attachment for my kitchen aid mixer to remove the seeds and skin. It was my daughter that said mom just throw everything in the vita-mix it purées you won’t see any skins or seeds. I pass this on to all my friends that did the old method.
I used your ladle method recently. Worked great and I canned the tomato liquid too.
Great video, Sarah! I didn't make pizza sauce, but I did make 21 quarts of spaghetti sauce. Spaghetti is on the menu for tonight! Also, my husband loves salsa on his scrambled eggs. I was determined to not buy any salsa this year, so I planted a lot more Amish Paste tomatoes...they did great...and I canned 67 pints of salsa! 😁 The plan is working so far! Be blessed! ❤

Awesome! I've been using up my Juliet tomatoes to make a roasted tomato soup base. Later, all I have to do is add some chicken broth and some cream. Perfect for when the snow is flying outside my window.
I make pizza sauce same as you thanks for tip on frozen tomatoes & release of water, I save liquid for Tomato juice
Like you, I make tomato sauce or soup using the whole tomato with onions, garlic etc and then use the Vitamix. I’ve never had a problem. So far I’ve bottled them but I’m considering freezing some next time.
I love your tips for using the roaster oven for large batches, keeping the skins on, and using the Vitamix... both saved me so much time this year!
I use my 22qt Nesco roaster. So easy.
I made and canned pizza sauce yesterday. I used tomato puree that I canned last year. Delicious

I would love to see where you store all your canned goods
I use the solid insert that came with my water bath canner. It has several holes in it. I just assumed it made the heat distribute more evenly. I've had it for over 25 years and still looks almost new thanks to vinegar!
I'm not the canning police. Definitely not an expert but I have been around for awhile and remember someone died from botulism when I was a kid. So everyone needs to check that the seal is properly seated. Whatever method you decide on, follow the instructions exactly and you should be okay 😊
The Vitamix really smoothed the skins and seeds up nicely. I've found I can eat raw tomatoes if I remove most of the skin. Once they're cooked I don't have any issues with them.
Your milk shower must have been great for the tomatoes, they look wonderful.

You need a steam juicer. I put all my tomatoes in the top, it removes all the juice from them and then I put it through my mill. Instant marinara

I agree with so much of your videos, but I have forgotten to put my trivet on the bottom of my canner and had the bottom of a jar crack. I personally would rather err on the side of caution. I've been canning for nearly fifty years, but am always willing to learn something new.

The bane of botulism is acid and tomatoes are the kings of acidic fruits. If you follow basic USDA guidelines you are in no danger. Thanks for this. Always enjoy the comforting process of canning. Long, long, time subscriber.

Yes!, it is all about the ph level, usually 4.6 or lower, Eliminates C.Botulism
growth. Whereas, pressure cooking is needed for veg, meat, fish and some
fruits of higher ph levels, up to 240-250 degrees which destroys Botulism spores.
