my mother wasnt much of a cook but when i was a child i remember two things very fondly. she made green tomatoes with white onion pickles and canned peaches. i drool just thinking about it. sad to say i never could find her recipes for them.
I don't have one for dill but I used to use my bread and butter pickles recipe for my green tomatoes. But they were still very firm so not sure how it would work for frozen tomatoes but I would think recipe for your dill pickles would also work for your tomatoes.
I've done this but with only a salt water brine and let it ferment on the counter a few days before going into the fridge. Also, I use only garlic and basil. It's amazing and lasts in the fridge all year. I know because last year made too many jars to get thru. I use them to make bruchetta and even to make pasta dishes and mexican rice. It's so good! And by being a ferment good for you.
Kevin, you are a great cook with different ideas as how to use your harvest. Going to try the cucumber juice you did last year. Will let you know if we like it.

Been doing this with sliced cucumber and onion for the last 50 years using stainless steel bowls and just covered with cling wrap. I add sugar, sometimes. The big trick for years was keeping them hidden from my daughters. Once found, their shelf life was reduced to minutes.
They look amazing! The recipe I used for my beans called for a half teaspoon of sugar. Playing the waiting game now 😂 I remember my mom always canned beets and would make quick pickled beets for supper. I've found that pickled foods help with digestion. I might try a jar of tomatoes with your recipe because tomatoes are one food that I like but have found I need to always cook first! 😊

I made the spicy version and brought it out for guests. I couldn’t wait to try them and popped in a sliced pepper along with a tomato right away…….My mouth was on FIRE for 45 minutes! 🔥 🔥 🔥 I used Hungarian Hot Wax peppers but never had them this hot. I’ll definitely be more cautious next time….😂
I just seen the perfect tomato for you Kevin, it's called Travel Voyage Reisetomate tomato, it's like a bunch of cherry tomatoes all stuck together, you can just pull off what you want to eat and then stick the rest in your pocket for later lol a pull a part tomato lol they look like a fun tomato to grow

While everyone is free to choose their canning methods, those new to canning should be aware (so they can make their own decision) that safe canning practices per the National Center for Home Food Preservation state that tomatoes should not be canned with the skins on as the skins can harbor bacteria. My favorite way to preserve cherry tomatoes is to dehydrate them and then snack on them instead of potato chips. Question about the dill. When harvesting dill to use for pickling, when do you harvest the heads? Buds? Yellow flowers? Green seeds? Brown seeds? We like the dill flavor, if that matters.
[this guy did say 'flowers' but i guess we use dill differently.] i've grown dill. it's the fine green leaves u'll want to use. do not allow the dill to go to seed; it will become bitter. pinch off and discard any yellow flowers as soon as u see them. i'd also start a few every couple of weeks so u have a tender new supply all summer. they get leggy so a tomato cage can keep them off the ground.
I just make a green tomato pickle relish from my end of season tomatoes...no one knows it's not cucumbers unless hubby tells them...but my lips are sealed...but this looks yummy! Gonna have to give it a try!
The Juliet tomato is hands down one of the most reliably productive tomatoes I have ever grown. It's absolutely fantastic and makes the most incredible soup.

I didn’t realize you could dehydrate them ! -that sounds like a perfect solution! so you don’t of course remove the seeds from these tiny buggers you just throw them in the dehydrator ??? I’ve Dehydrated slices of tomatoes that I’ve seasoned with oregano and basil and a little salt, but I never thought of doing the cherry tomatoes !
Sun dried cherry tomatoes (in oven), cut in half and liberally seasoned with Italian herbs, oh so good. I’ll freeze them in small batches to use on my pizzas. I use Juliets too!

I am surprised you don’t do a jar of tomatoes with basil. Such a classic flavor combo. I have fridge full of refrigerated pickles and I personally think they last years between vinegar, salt and refrigeration.
I made what we called chowchow and I left it in bigger chunks and I put cherry tomatoes, little green cherry tomatoes in it as well as some chopped green tomatoes but they were good, and I love a good chowchow.

That pickled cherry tomato recipe looks very good and it's a great way to use those excess cherry tomatoes!! You will be getting tons more cherry tomatoes before the end of the season so I'm sure that you will be making more pickled tomatoes!! Sarah's cherry tomato pizza sauce recipe is another great use for excess cherry tomatoes!! At the end of the season I plan on putting some of my green cherry tomatoes in paper bags for ripening, making green cherry tomato cake, and freezing some of them to add to chili and soups during the winter!!

We got a bumper crop of tomatoes this year. I lost count at some point, but about 6 or 7 bu. I made catsup, regular and spicy tomato jam, stewed with celery, onion and peppers and puree/ juice. San Marzano paste type, did great. We should be good for a year or two. No more cherry tomatoes, will have to try next year. Ours all split this year.

@@tmiller6989 I do slice the cherry tomatoes and leave seeds in them. I will have to dehydrate some tomatoes and season them as you suggested. 😋
