    it's just the way that Cantonese Dim Sum restaurants that prepare and cook this dish in their to-go area section years ago b4 my favorite dim sum spot shut down last year due to Covid.... I remember they used steamed fish ball and Steamed beef ball and roasted pork siu yuk when I got them for Togo for my next meal as I remember it correctly thanks for sharing this healthy and yummy cantonese bitter melon recipe I wanna cook one day with beef. do you think fish fillets 🐟 🐠 🎣 and lobster 🦞 and shrimp 🍤 🦐 gonna work with this recipe to substitute for my pescetarian friends?????

    Interesting vegetable. I've seen bitter melon at a fresh market near me, but didn't have a clue what to do with it. I'm Vegan and don't use any animal products or oil, but I might try a version of your recipe using portabello and some shitake mushrooms. Thanks for the idea.

    Just personal opinion, my mom used to add some ginger and small spicy chillies few pieces.. if you can eat spicy.. Well different country different adding ingredients.. But I still likes the steps you cooked, just liked my grandma and my mom( got Alzheimer) I can't eat her cook anymore.. really missing them..

    Thanks! Just what I need. I have to consume the softened bitter gourd and the extra no-longer-crispy roast pork and was wondering if I can combine them both in the same dish to save time (I'm a lazy cook learning to make my own meals during this Covid pandemic).

      Yes, I think so. you can stir-fry Bitter Gourd and roast pork together :) This is a quite common dish in Hong Kong. :)

    Thank you much for demonstrating exactly how to reduce the bitterness. I knew about the salt but not about the pressing and squeezing part. My wife dislikes the bitterness. I like bitter gourd. This should solve the problem.

    My dad cooks a lot of things with black bean and garlic. I grew up eating this.

      @@letscookhongkongfood1566 I learned to cook authentic black bean pork spareribs from my dad too he said use the real fermented beans in the bag. Don't use that stuff in the jar lol

    I am not familiar with using fermented black soy beans for cooking. Can you share a picture/link of the kind you use in this recipe? I googled it but it comes in so many different ways - cans, bags, etc. Also, in future videos could you please show the packaging of products that you purchase for your recipe so that we would know what to look for at the grocery store? Thank you.

      You can use also a black bean fermented for steaming a pork with squash. Or with a fish heheh

    Was the bitter melon rinsed after squeezing? If not, is the dish not too salty with the added salt? Thank you!

      no need to rinse after squeezing. The salt was thrown away with the melon juice. Not salty at all. don't worry. 😄

    black bean already salted...why add more salt?

      That is optional. You can taste it and add salt if needed.

    I like the bitter melon but with chicken I do not eat pork and instead I put miso and sake .

    Fascinating flavor mixtures. Must try this. As a westerner, I've found bitter melon in other dishes a bit hard to take but this might do the trick. Wonder if that was palm sugar, jaggery, or something else?
