You should probably chill the water before adding carbonation to get the most fizz. Cold water takes carbonation better. (maybe that's accounting for the flat taste you had) Then add the syrup right before you use. As for the mics, just put them in your lapel, they seem to be plenty sensitive. They pic up everything around you.
