      It's tricky because they're all made differently. My go to brand here in the states is by Cibao Products. They have them in Hispanic and Caribbean supermarkets

      @@Chefzeecooks 😄 it's a Chicago specialty, you'll have to take a roadtrip! 😆🤣They sell them at every hotdog stand and grocery in town. It will be nice to introduce a piece of Chicago to your Dominican Locrio recipe!!

    Wow! My husband is Filipino and they use longaniza in several dishes.. it’s also sold in some Asian food stores as well.

    Longaniza is life! Especially if you can find the original kind....the ones made by hand. I got my hands on 2 packages of the store bought kind recently....didn't last week.

      @@Chefzeecooks you gotta go to DR for that. That's all I had growing up there...then they started factory making them. They good but the old way was better. It had bigger chunka of meat and incredible flavor. I even saw people en un campo making morcilla by hand from scratch once....that's when i learned they used blood to make it. I left DR when I was 14....long overdue a trip. I'm 42 now.

    Hi Chef Zee, I have to thank you for putting out these easy to do videos. I recently moved to New Jersey from New York and in my new area, unfortunately there's only one Dominican restaurant but sadly they are not consistent especially many other restaurants in my town who I simply think they can cook. There are a few Dominican restaurants in New York that I wish I could cook like them but simply can't. You take for granted what you have and once you move, you appreciate it more. Google ratings are also misleading because those who are conformed to the type of cooking in their area food eventually they believe the like it or they just never had good food. That was always the case with pizza, people swore up and down the pizza in our Queens ny area was great and I was like, are they kidding? I've had better pizza and you know it's good because tourist would go there. Thought it was me but even the service was better in ny. Im sorry but the dominican restaurant in my town sucks..I started to learn how to cook more dishes mainly because of the pandemic. I started cooking more from home because many restaurants either temporarily closed or out of buisness. I was craving Dominican my NY style dishes especially asopao de pollo. I first attempted to do it and it came out awesome. I got the confidence to do another dish from you, the chicken noodle soup, oooo it was a hit..that soup is like Crack for us, everyone went for seconds and thirds!! I marinated the chicken a couple hours and it makes a difference.. My beans are also have improved exponetionally and it's gotten to the point where you can eat it like a soup and I think that's the key to a good beans..I have yet to make it from scratch..
    when I'm making your dishes, I tend to taste to get the right flavor and by the time im ready to serve, I'm halfway full just on tasting alone. The whole house smells awesome when cooking your dishes.I can't wait to try this dish and others you have. You have been a God send with these videos being so easy to make and broken down perfectly especially for a person like myself who is not considered a good cook. I can make a few things here and there but im always open to try new things if I think I can do it. Thank you, Thank You, Thank You..my Dominican mother would be proud..

My goal is help people feel comfortable cooking dishes that they grew up eating. The fact you feel confident now in the kitchen means everything to me. Don't be afraid to add your twist to these recipes and make them your own. Always remember to have fun and know that even a seasoned cook will make mistake-- and that's ok.     That’s exactly how I make it. The right longaniza is key. Not all longaniza releases the same amount of oil. The Cibao Brand is very good for locrio. Releases good amount of oil, which is what gives it that flavor.

    This is interesting, I come from a cuban background and grew up in a poor area in Vermont. My abuela would come over from NYC to stay for a week here and there and she would cook Cuban rice and mix it with chopped pan fried hotdogs topped with a little vinegar and should would always call it Arroz Con Salchicas Cubanas lol. Sorry just thought I'd share this story cause this dish kinda reminds me of this that. Looks good though! Que Bueno! Muy Delicioso!🇨🇺😁

      I'm half Cuban as well and know all about this Arroz con Salchichas lol. It's one of those dishes that you have as a kid and you look back as an adult and think-- "wow!" Even though it was a modest dinner, it always felt like 5 star dining and it's still one of my favorite dishes to have an adult!

    Great recipe. Question: Do you make any dishes WITHOUT "sopita" (chicken bouillon)? I don't like to use it because it has MSG...or do you know of any sopita without MSG? Thanks again for ALL your videos and for giving us your time. Cheers!

    Two questions did u boil the longanisa before browning and second did you leave the fire on high after introducing the rice and combining all the ingredient prior to the recao

    What about toasting the rice a little in all that delicious longaniza oil before adding the water? This recipe looks amazing and I plan on making it soon. I love olives so much I'll probably add twice what you did at least!

      Yess!!! My fellow olive lover!!! You can definitely toast the rice in the sauce. I actually do this when I make Locrio de Pollo and never thought to do this for this locrio-- not sure why lol

      I'll typically substitute sazon with paprika and either crushed annatto seeds, annatto oil, or powdered annatto.

      You definitely can, you'll just have to adjust the cook times and water to account for the brown rice which takes longer to cook.

    When you say 3 cups of rice and 3 cups water, do you use the same measuring cup? Or do you use the one for liquid measuring for the water?

    Time to see if I can source the Longaniza sausage. I made a Locrio de Pollo last night. I used brown rice instead of the long grain white rice. Usually we eat short grain white rice because my wife is from Japan, but we often mix the short grain rice with the brown rice. I love long grain white rice as well. Is there a specific type of long grain white rice grown and used in Dominican cuisine??? I’d be curious to know. I know Basmati rice is long grain. Thank you Chef Zee.

    Looks yummy! Question, when you are browning and cooking the rice in the beginning, the heat setting was on “high” this entire time??? I’m bad with temp. And I have an electric stove. please help!!! 😩😩

      The heat should be on medium/high until the water is absorbed. At that point you put the stove on lowest setting for 35-45 min.

    What kind of rice do you use? Medium grain, long grain, jasmine, etc. i have such a hard time making the easy stuff like cooking white rice.

    Hi chef Zee ! I loved this recipe ! I just have a curious question. On another video where you show how to fry longaniza, you actually washed and boiled it before frying it, but I didn't see that step here. I wonder if you did it before starting to cook, but didn't show it or if this is a different type of longaniza that does not need that step. Thank you!!

      Hmmm I’ve never heard of anyone washing longaniza. We’re you referring to the rice? She always washes the rice before hand. Hope this helps

    longaniza is so hard to find in Atlanta.. not to mention culantro! i’m going out hunting for some pretty soon.

      I’m in Atl , culantro (and all the peppers/spices she uses) are at dekalb farmers market and Nam de mun farmers market . Though I used a chicken sausage for this recipe I saw the longaniza she used in Nam de mun farmers market . Hope this helps

      ​@@Kbellabella23 those markets are great. you can even find calderos in the dekalb or buford hwy farmers markets. nam dae mun also carries a lot of Dominican staples, they're great, i'm going to keep an eye out for longaniza there. Today i'm trying this locrio recipe but with fresh (mexican) chorizo instead of loganiza which is quite similar... but o missed the part where our chef says to wait for the sizzle and pop before covering it. until next time.

    Which brand of longaniza and Salami should I buy?? Im getting the itch to cook again, I want to try both... The Longaniza I usually find, is thin one never seen ones in this video..

      So for Longaniza, I typically go for the one made by Cibao Products. And for Salami, I switch back and forth between Campesino and Induveca

    Does cutting it in thick pieces take longer to cook than thin pieces? What is the color supposed to be in the inside once done cooking? Wish you cut it in half to see what it was supposed to look like.

    How do I find longaniza? Is there a name for it in English? When I google “Dominican sausage” only salami comes out 😞😞

      Longaniza is a spanish style sausage. Almost like chorizo but different in flavor

    My uncle told me longaniza is bull *enis as a child and EVEN as an adult I still can not eat it. I found out it wasn’t not a long time ago... TWO YEARS AGO. I’m in my 30s 🤣🤣🤣 Tio really scarred me 🤣🤣🤣🤣🤣
