My first time having a chimi was in Miami. After leaving a club with my hispanic friends who are Puerto Rican and Dominican we went to a Dominican food truck and OMG it was soooo good!! I use the same seasoning in the pilón for the meat. However, my secret is that I cook the cabbage for about 3 minutes on the stove with some of the mayo and ketchup mixture. It’s so flavorful. Yummy

Hi Chef. Im from DR and I remember my childhood eating a lot of Chimis in the park. Look, I think the original name came from an Argentinian named Juan Abrales in DR who started selling this burgers with the original chimichurri sauce. Years after many versions came out. Nice vid!

Thank you for making your version of the chimichurri dominicano. The way I grew up with it was with the cabbage dunked in the orange sauce. My chimi is more like a Dominican sloppy- joe with all the saucy cabbage. Love watching you cook, keep those great dishes coming 😋.

Well I'm originally from Perth Amboy NJ, a very heavy populated Dominican community. Most restaurants that offer chimichurris make it that way but my fave is from a restaurant called Rancho.
Amazing going to try this at home would save a lot ! I’m from corona queens and 108th street and 46th avenue is the best right now ! 108 and 37th was so good , I miss it ! But this one is #1 right now !
Actually there are many versions of Chimichurri. Some people add some bitter orange juice and worcestershire sauce (salsa inglesa) in the sauce (salsa rosada) And many people mix the cabagge with the sauce and fry it for few seconds. I like your version of the chimi though
@@lulut4932 yeah, in fact, its the first time I'm watching a Chimichurri with a completely raw cabbage (even if vinegar cooks it a little bit), some people even mix the raw and the fried cabbage, I think it's the best option to keep the crunchiness and get different flavours at the same time, becausz the taste Is different when it's raw or fried. Totally raw Is healthier at least. Go to do your mum's version, ours mom and/or abuelita are always our best Chef cook in the world 😆
There's definitely a million different ways of making it. I've made a few different ways myself. I ended up sharing the version of the chimi that I like best that mimicks the chimi that I used to get from my favorite truck before it closed down :( Some chimis are saucier than others and others have more crunch etc... It really comes down to personal preference. It's also why we go so hard for the chimi trucks that we like because they all put their own spin on it :)

I was from queens and the chili spot from 108 was amazing. Now live by Dyckman Street and they have pretty good Chimis. It’s located in Dyckman and Sherman and I believe they are there after 8pm Thursday -Sunday. I’m sure they are currently closed now due to the Corona virus pandemic.

When you fry it, make sure to go easy on the vinegar! You don't want to end up with a version of sauerkraut lol
