  • We are back out on campaign and were lucky enough to get a haversack full of apples! Thanks to an Ohio soldier's letter home and an 1860s cookbook Will knows just what to do with them. Let’s enjoy a hot meal that is a far cry from hardtack and coffee! This is an easy and delicious dish to make at home to connect with history. Thank you to Waterloo Farm Museum for hosting this episode.

    I bet the applesauce would help the salt pork, maybe cook it in some of the applesauce to add flavor and help with the saltiness.

    Hey Will, I was recently looking at different buildings used at the Siege of Petersburg, and the icehouse there caught my attention. Is there a replica icehouse or one still standing in your area that you could do a video on? I think it would make fine video content and give us another key insight in the lives of 19th century soldiers and citizens. Thank you and happy birthday!

      We often changes in Civil War recipes from modern. I’d like to try it with the butter at some point.

    Excellent, Will!! - I thought for sure you were about to boil your tongue in the process, and glad I was wrong. How was the taste different from current jarred applesauce?

      The apple flavor was more forward because it only had sugar added and it was chunkier because I didn’t let it go as long as I could have.

      He was set up next to our vendoring tent at Jackson, Michigan in August. He is still in business.

    Do we know that they peeled the apples? (The majority of the nutrition is in the first 1/8th inch under the peel.) Also, that was an extremely wasteful example of cutting up apples. Certainly they were not nearly so wasteful back in the day. Just a couple of thoughts. Thanks for the content!

      That one came from a short run done by Axel Ulrich. It is not part of his regular offerings unfortunately.

      @@CivilWarDigitalDigest yeah most of my tin wear has come from him. Maryland sutler out of Gettysburg has a 5X4 boiler with a lid made by Axel which I might pick up. It will be good for at least me and my son. Unfortunately the authentic suppliers are dwindling these days and stuff is getting hard to find. Thank you for the reply!
