Soak the corn in the sous vide thing, then toss it on a grill, flipping until the leaves are charred, and the corn inside is cooked. Coat in mayo, cotija cheese, and Yajin seasoning. 😋
Exactly what I was thinking. Corn should be grilled and this is a way of speeding it up.
Grill is a great way to finish it! I prefer it husked when using the grill to finish it to get some char. Love your coating recommendation!

Half an hour at 185 isn't enough. I found the best balance of time and temperature is 1 hour at 180°.
