The lockdown has given me this opportunity to watch your video. Very informative for me as I love wine.We use traditional yeast made of herbs and millet flour but your way is quick. Great job and Keep it up!
Thanks 👍🏼 I will 😉
Hi Maya am from Montréal Canada and am a buff of different recipes from all parts of the world which are traditional and sometimes lost true generations If Possible could I have your recipe of yeast of your herbs and millet flour thanking you in advance
In central China and Japan, people also make rice wine. We add a lot of jasmine flour cured in honey. We collect fresh jasmine and add them in honey for months until they are totally mixed. Then, mixing with the rice wine before fermentation (or after fermentation, I am not sure). It gives you a fantastic taste.
Thanks for the informations 👍

You want to make a short video for us to see how?

Dear sir,Nice demonstration. Thanking you. Kind regards. Dr.Raghavan.
Welcome 😊
OK we made this about 6 months ago and put the bottles in the fridge. We did not use sugar. We soaked glutinous rice over night and steamed the next day after it cooled I put the yeast balls, after about one week I added 1.5 liter of water for every kilo of rice .after about 40days I strained the rice and squeezed all the liquid from the rice with a cloth. From 3 kilo of rice I got 8liter of wine. As I said before we put the bottles in the fridge. Now 6 months later we tested the taste. IT IS SPECTACULAR!!! perfect for celebrating the New Year! Happy New Year thank you!
Spectacular 🤩 thanks for sharing your experience and your advice 👍🏼
@@Spectacular-cuoredicioccolato Once I made sugarcane wine. After bottling, there was a blackish layer on the top side of wine. I think that was due to oxidation. My question is that how to avoid this as it affects the taste of wine too??

Hello again, Cuoredicioccolato, I am working on my rice wine already! At 10:29 you mention an important tip regarding sparklingness. I did not notice if any kind of sugar was added, or anything at all. Could you please explain? Thanks a lot for your constant support and creativity during hard times.
Put sugar in the bottles, maximum 10 grams per 1 liter
This is one I am excited about!

I doubled the recipe and it has one more week to ferment until bottling. Cant wait to see how it turns out. I’ve made traditional Korean rice wine but it’s a little funky and sour for me. Hope this recipe turns out better. Thanks!
Are you using the airlock?
@@Spectacular-cuoredicioccolato absolutely. I have a 1 gallon glass fermenter with an air lock on top. It’s bubbling nicely!

Hello from Algeria,
I want to try this! Making the beer first though.

This isn't real saki. He real.japanese rice wine doesn't have or has a special yeast added . This is simply using yeast to turn rice starches to alcolhol using yeast And there's alot better tasting sugars to ferment than rice sugars . The rice is used for the yeast and the sugars in real saki
Exactly 😂 but nobody said that this is sake 🍶
@@Spectacular-cuoredicioccolato no you didn't say it was saki . But most people see rice and assume . You should tell them the difference . Saki is higher alcolhol than the slop you made in the video . What youre making is sugar wash basically and I don't think I was talking to you at all brah . Why don't you make some real booze instead of instructing people on how to basically make an undrinkable mess ?
🤔
Wow... This is amazing, i actually make it at home. Keep up the great work.. 👍👍

You would be the best neighbor. I bet your parties are fun and fabulous! I was surprised how much wine it made. I was thinking why so little...I would have had that filled mostly full. We have a big family :)

Hi, amazing video! I have just put my mix to ferment. wish be luck! I have recommended your channel to the rest of my family, who are losing their minds 'cause of the lock down.
Quick question, when you put the wine in a glass bottle, do you have to keep releasing the CO2 pressure buildup?
Thanks 👍🏼
No but you should put in the bottle when the fermentazione is over
@@Spectacular-cuoredicioccolato Thank you so much!

I made rice wine in last month... But used baking yeast instead of wine yeast. Is there any chance that methanol will be created in wine because of baking yeast? Will it be safe after 1.5 month to drink?

Wow...thanks bro...
Today after 22 day of fermention completed....i tested wine.... Excellent taste....golden colour....
I transferred to air tight bottle...i will taste it again after 15 days.
Bravo 😋🤩👍🏼
You can make sparkling wine from your homemade wine by adding a little sugar in the bottle before filling. Homemade beer makers sometimes use this technique to naturally carbonize their homemade beer. Then store/wait six weeks before serving. Research the correct amount of sugar to add, else your bottle could become over-carbonated and explode. If doing this method there will be residue yeast at the bottom of the bottle after six weeks. So pour carefully, and try to use smaller bottles like a beer bottle and share your wine. This method will not work using store-bought wine, cause there is usually no remaining yeast in a bottle of commercial store-bought wine.
Thanks for the information 👍🏼
Do I need to shake the original bottle before filling to colect yeast from the bottom or is this not necessary?
Yes 👍🏼
Thank you for the ez to follow hydrometer calculations.
Welcome 👍🏼

Is there any risk for drinking such wine? What mistakes must avoid during process?. What is role of density..?
Please answer
Comparing the density before and after fermentation gives you an idea of the alcohol percentage.
Exactly 👍🏼 thanks
No risk, this fermentation produces ethanol, CO2 and that's about it. Only risk is, if you don't do it right, you may get a horrible wine that will go down the drain.
Can i use parboiled rice from ALDI store? Or must be a special rice?
Sticky rice is better, but you can use too parboiled rice

what kind of yeast u used, and another thing is, it seems u didn’t steam the rice and just boiled it quickly, how long it takes, and why u don’t steam it
Brewing yeast or wine yeast or rice yeast.
The hot water will cook the rice
@@Spectacular-cuoredicioccolato Pls can you make a short video on how to make Rice east or brewing east i am a bit lost thanks
You can do the same of this video
ua-cam.com/video/29IGl7I5_3g/v-deo.html
cuoredicioccolato can regular baking yeast work?
No, sorry
Nice video love and respect from India,
I have some questions
A)How to increase the level of alcohol????
B)And how much yeast I used in per one kg rice??
More sugar = more alcohol, but be careful not exaggerate
The same quantity
A) Put the endproduct in the freezer (plastic bottle) and if it is frozen, release the cap and let half of that bottle drip in a bowl. Alcohol has much llower freezingpoint than water so you now what first comes out of the bottle ain't water.
🤔
Theo Buunermond you want pure alcohol?
@@koelling No since a freezer has a limit, I guess it wouldn't be pure alcohol. But 40% alcohol is not a problem.

I enjoyed a lot during the lockdown making crazy strong wines while others around me were craving for whisky and beer and buying them in black from the milkman. It just cost me the price of 200gm sugar and two handfuls of rice to make a bottle of wine. 😂😂😂
Straight to wine shop n njoy,, can't wait

What makes this sparkling?
The fermentation of the sugar

Thanks ☺️ I will try to make more videos about wine and beer. Do you have some request?
If you could show how to make vodka or brandy, in a simple pressure cooker, it would be a great help!
I am not sure but maybe in the future I would like to do it 😉
i have a question, can i bottle my wine on the 11 th day, as now there is no sign of fermentation process going on. and can i bottle my wine in a screw cap bottles? as its hard to find cork where I live. what if I would add a little pinch of sugar in it, then how tight should I put the cap on?
Yes, you can.
I don't know about this kind of bottles, but if you put the sugar and after you leave open ...
If you want the wine sparkling you have to add the sugar but you must close the lid very well. 10g for 1 liter 😉
Hello dear tnx so much for sharing yo videos and I would like to know how to find the alcohol percentage in da wine, and besides how did you get the 7.5
Welcome 😀 you need the densimeter. 7.5 belong to the formula 😉 follow the video
The formula for determining alcohol by volume percentage by Specific Gravity units is OG (original gravity) - FG (FG) X 131.25. In this instance, 1.125-1.052 = 0.073 X 131.25 translates into an ABV of 9.58%.

Hi there wanted to know if you washed the rice first before making the wine and can i used grape yeast to do wine.
i love your videos .. so relaxed ..but what herbs do you recomend for rice wine to improve the aroma and taste ??
thanks .. 👍👍
You can use some fruits 😉 that you like
@cuoredicioccolato if adding fruits into this wine, do we need to transfer the wine liquid to another fermenter like your others fruit wine?
Yes 👍🏼
New subbie here! Enjoying your vids. I have Never made beer or wine. I love ginger beer tho. Unfortunately I buy from store. :-(. I do Want to make but haven't tried yet.I love ginger. I have some ginger in fridge just begging to be a bug. Lol. I did make apple cider vinegar tho. It turned out good. Also made couple small jars of kraut with cabbage and Brussel sprouts. Yummy. I am curious as to why you dont fill up your fermentator to almost the top with more water? What size is it? It seems you only make small quantities of 1 or 2 bottles of beer/wine? Is there a reason for that? Lastly, you say to keep the yeast at bottom to use in next ferment, but I thought those yeast were dead? You REALLY make beer and wine making look super easy. I gotta get the right tools tho. Where did you buy the specific gravity ruler and the plastic fermentator? Tfs!
:( no space for the storage.
The yeast it's still a live, try it ; )
The gravity ruler you can buy on Internet 👍
the fermentator you can make with ermetic conteiner.

@@Spectacular-cuoredicioccolato Oh, thanks. Can I add more yeast now ?

Hi cuoredicioccolato! I plan to make about 4L of water. So if I follow your recipe does it mean that I should use 1kg of rice and 2kg of sugar? Won't it be too much sugar for 4? Also, did you use sticky glutinous rice or just an ordinary rice?
You can use the rice that you like 👍🏼
Yes it’s a lot of sugar 😬
Very nice video. Did you boil the rice after you add the sugar? Or you add the rice and turn off the heat and wait for 10 hours? Thank you for interesting projects.

Moshi Moshi 😋 I know only that word in Japanese 😂

Hi, firstly thanks for this easy receipt, i'd like to ask 2 questions.
First is i can see just 1 litre water in ingredients so that in the end we'll have only 1 litre wine ? I m asking because there are 3 bottles at the end of video making much more than 1 liter. To make 4 litres should we multiply the ingredients x 4, i mean 1 kg rice, 4 litres water, 1 kg sugar etc.
Second question is , some cider-makers drop hops in fermantater during fermantation or after fermantion completed and let them in for a few days more (dry hopping ), can we do similiar with this product ? maybe we can get something like beer with hopping and one or two sugar while bottleing.
1) yes you have to multiply
2) with the hops could be a rice beer, but I can't guarantee for the taste 😁
I certainly wouldnt recommend adding hops. You can add a little rice to barley malt to make beer but all rice will not make a tastey beer.
You can also make a good rice wine with rice and white grape juice.
👍
sir i loved your english like this wine
😂 thanks
you added it just baking yeast?

Thanks for watching and sharing the video with friends and family
Hi Sir
Thank you so much for your recipe
Just have one question
Where is the best place to store this wine(for example fridge is better or just some dark cool place?) And how long does it store?
Dark cool please but not more than 1 year
Love your videos man.
Thanks 😉👍🏼
Hi, probably a silly question... Did you use a simple bread/brewing yeast versus a koji/saki yeast? (Can't get them where I live). I am new to brewing with rice and I am not sure if "normal" brewing yeast actually can eat/break down the complex sugars in rice. Any comments would really be helpful. Thanks.
Like you wrote normal yeast can't break the sugar of the rice, but in this recipe will break the sugar that you add.
This method is a bit of "cheating". Traditionally you want yeast koji mold (Chinese yeast balls can be found on ebay, they are a ready mix) that breaks the rice down into fermentable sugars and ferment that into alcohol. In a method that is used in this video you do not ferment the rice sugars but normal sugar that any yeast can ferment, though it is better to use brewing yeast instead of baking yeast for flavor and clarity reasons. Anyway the rice is just there to add flavor and body. It won't be the same as traditional rice wine or sake but it is still technically a rice wine.
Yes this recipe is from Cuba, not from Asia
