    I’m in Australia and my mother used to call this dish porcupines. That’s what the mince and rice balls looked like, it was one of my favourite meals.

    A very good tip on how to handle lemons; as soon as you bring them home from the store put them immediately into the freezer. When you’re ready to use them take one lemon put it in the microwave for one minute. I always zest it at that point and you get wonderful bits a lemon to either use in your dis or cover it and put it into the fridge. Then its very easy to juice and you get a lot if juice from the lemon. Or you can simply slice it if you want to put in on a plate next to a piece of fish. The fresh lemons keep a good long time frozen. You wont be throwing lemons out for going bad.

    You cook exactly the way my mom cooked, her island was Samos. All her recipes of course was written in Greek. Bravo❤️

    For my Greek soupa I use fresh chicken broth fresh chicken 12 lemons 12 eggs black pepper and sprouted rice with chicken base.. meatballs fresh ground lamb and cinnamon too 😍😍😍I also have to temper my eggs first before it goes in.. no cvornstarch .. when I used my eggs from my chicken it was the richest creamiest soup I ever made

    My parents were raised in Corfu and they add rice in the broth as well. Makes it very hearty.

    My favorite is the Greek Lemon Orzo Chicken Soup so I was thrilled to see another version Lemon is such a wonderful flavor on fish, vegetables, salads, desserts. Thank you.🎉

    Thanks for posting. I could never really find a good recipe for this. Asking my aunt who makes this so well would never give me exact measurements. Every time I make it there wouldn't be enough broth and it would nevr thicken, always tastes like lemon water. Can't wait to try. ThAnks.

    Hello Dimitra. I made the pita bread yesterday and it came out ok. Only one came out pocket pita and the rest just plain flat bread, but tasty. I will try again until I succeed. My chicken, potatoes in lemon juice was very good. Also my chopped meat and potatoes was delicious. I will be making afgolemon suppa someday, I'll let you know how it came out. I love soups so I was wondering if you could show me how to make "patcha" soup/ tripe soup. I used to go to Astoria, Queens, NY during the late 70's and enjoyed a large bowl of hot Patcha soup. It has been 40 years since I enjoyed this delicious soup. There in no place that sells it anymore since the only store closed down. Thank you.

    god bless dimitra i wish my mom was here i think she s the best cook in the world but now you are my favorite! apo pou isai? years ago they had some good greek restaurants in philly but they all closed dont know why! greek town astoria is the place but to far! na ise kalla!!

    This is interesting Demitra. We used to mix the yokes in with the meat. Then I would wisp up the egg whites and then slowly mix in the lemon in the frothy egg whites. After the meat balls are done, we put them with their meat broth in the bowl and then pour the lemon sauce over each bowl of meat balls. Thank you for your great presentation!     do you have any Christmas recipes? i will love to cook something greek this Christmas because my husband is greek and even though we live in Greece last Christmas our dinner was a mixture between Dominican and greek food. it was pretty good !!

    If you are canning, especially tomatoes, you have to use bottled lemon juice since it has consistent ph.

    Looks very good!! I think u may have added a little too much rice to the meat balls. We have a similar soup in our Romanian cuisine.

    Dimitra let me give you an idea for this meatball lemon sauce recipe ...instead of cooking the rice while inside the meat...mix cooked rice with ingredients before cooking then turn the ball in flower and lightly fry them with little bit of oil to create a layer of crispiness then put them in an onion olive oil boiling water and lower the heat to minimum then şin the end add the lemony sauce ...it will be thicker and more presentable....we do this meal in my house .....my wife is Turkish Bulgarian and myself Tunisian...youvarlakia means something rounded in turkish but frankly greek are creative in food

    Hello!i have another question here))can I use the meatloaf mix(pork,beef,veal) instead of just using beef?and is it okay to use a regular uncle bans rice instead of basmati?thanks a lot

    Love this dish, but way too much salt. People with high blood pressure and/or low kidney function, can't cook with so much salt.
