The cards look really awesome! Just great design work! They work as pieces of art, I like the way you've designed for the plastic case, adding the title/bonus card separately. I hope they sell well and that you can do more printed design projects! ❤
Cool stuff Joe. Some feedback: there are 4 (!) typos on the N64 card! "Procesor", "enviroment", "realase", and "tradmarked". I guess those are included in the uniqueness of the first edition :)

Why do people collect cards is what you're asking? Do I really have to explain that? :P
I am an artist in 2017, through 2020, I was doing etsy, and print on demand for my art, I do my own designs my own art pieces, they are a bit in the mindset of " woudl someone like this on a mug or t shirt " and rarely " woudl this be a fun poster. But I did those too. with AI art becoming what it is, I pulled every art piece I had ( mostly ) online. I only have a few things up on zazzle now. My teespring account I dumped 200+ art projects, because of thier embrace of NFT, and AI and other garbage ( did nto feel very safe there anyore ).
at this point, I am making an end of the year calendar, and thats about it. AI has ruined me as an artist. My hope is that, AI becomes regulated, and falls under copyrihgt preventing them from theft as they do already. For the time being, I just 'exist' with my digital art, with a lot of unfinished works as I get so far and get "AI depression."
As to your cards, What about making "pun" console cards. Maybe yogs related and console merge idea? "Gin-tendo" with a gin holding Mario-Lewis icon? a Linux Pedquin/Penguin? a "Commode-door 64?" parody laws would allow you to do this without nintendo getting grumpy.
