There's no doubt - super steels take more time to sharpen, and re-profiling to a different edge angle is even worse (even using diamond stones, taking a Giant Mouse Iona in M390 from 20° to 17° took me 1.25 hours straight - ask me why I don't generally reprofile super steels anymore;-). I have found solace with the Spyderco Sharpmaker (and definitely needed to add in the diamond triangles) for consistent and relatively fast maintenance on most any super steel - except those with an edge angle of 25° - then I cry 😊. Very versatile tool, lots of useful goodies, great size and materials. That was a good demonstratio of them also. Do you plan on coloring the jade? I'd definitely hit that bad boy with electronic cleaner spray to strip all that gunkiness out. The fork looks like it'd be useful. For now I'm not going to color the G10, but I'm absolutely gonna dye the micarta ones burgundy wine before I swap em (and I'll definitely blow the tools out with rubbing alcohol and compressed air)...I was thinking of making a short out of the whole process...would that be worth it? 👊 ✌️
