(Albert, just to let you know the chopping board link above goes to a 30 cm paella pan.) I adore cod fillet, so delicate, flaky, and easy to eat due to there being so few bones. We're swapping our usual cod, with lemon juice and thinly sliced shallots, to do it your way this week - your recipes are always reliable.

Albert: Delicious! *_I❤COD... as well as that garlic (and vinegar) goodness !!!_* A WILL-make. This one should be

Puerto Ricans eat salty Bacalao with Bijanda. The Spanish introduced salty Bacalao to the, island Indian people, in the West Indies, which is Puerto Rico today. The Indians of Puerto Rico were the first people that occupied the island. Thus, the Puerto Ricans, that evolved from western Indian people, continue the Bacalao tradition

Nice that you can get such good garlic. Most all of the garlic in the markets here in Connecticut has the green germ in the center of the clove so we have to split the clove and pull the germ out or else we suffer that bitter heat kind of taste.

Great recipe, thank you! Many years ago we were eating a dish in the South of Spain, it was sliced potatoes, roasted in an oven dish, topped by fish. I think it was all baked together. Ever since I am trying to replicate this, I use cod for it. I wonder if you know this dish?
