  • I am in Norway! To be precise, I am on the Lofoten Islands in the North of Norway. It is here where in the months January to April "Norway's best kept secret" - sustainable MSC certified Skrei, also known as Winter Cod is caught!
    The name Skrei comes from the Norwegian word for wanderer or nomad. This is because the cod travels from the North Pole to the Lofoten Islands to spawn when it gets caught. What makes Skrei so special is the pearl white, firm flesh - which makes it ideal for panfrying! So today, pan fried Skrei with boiled potatoes, sauerkraut and mustard sauce!

    If I see it, I'll now know what I'm looking at, nice chunky looking piece of fish. Nice hearty looking dish for the colder months. Not tried sauerkraut ,looks good with the potatoes and mustard sauce. Thank You Bart.

    Bit short on Skrei down here in NZ. May try it with blue cod though now winter is on its way. Looks good

      Bah, you know what else isn't a good looking dish? a traditional fish pie with smoked haddock, cod and salmon. I dare someone to try to convince me that dish isn't the most incredibly flavorful winter seafood dish. I'm sure this taste phenomenal. I think the only thing I would change is that I would add some seasoning to those potatoes. Maybe the sauce and sauerkraut is enough though. :)

    Hi Bart, we love cod (Skrei) but how can you tell if it is fresh and sustainable. As I ask the fish monger and they claim it's all fresh and from a good source, yet I see most of the fish we are able to procure in the NE of the USA is farmed in So, America or SE Asia and I have my doubts. It seems the BIG food chains put eh small fish stores out of business. Is it better to buy fish from online source? If yes, who can you recommend for us here on Long Island. We tried going the the actual boats in Montauk, but they claim ALL their catch goes to Japan overnight.

    I don't know... it looked delicious to me 😉. Quick question, I heard the some cod have worms?.. if yes how do you get rid of them or can you? Love your videos. Cheers from 🇨🇦

      Good question! It is true that worms do appear in some fresh cod, this is something that happens when you consume wild seafood out of nature.
      During processing of freshly caught cod, there is an active search for worms. If a piece of cod contains a worm, chances are high that workers will discover the worm and remove it - however, it can happen that a worm remains unspotted and will stay in the cod when it hits the stores or your fish monger.
      The worms will be harmless if the cod gets heated to a core temperature of 40 degrees celsius, while a piece of cod is cooked when it has reached a core temperature of 60 degrees celsius. Other methods of killing worms will be for example freezing the cod or "cooking" it with acid, like lime or lemon juice in a ceviche.
      If you discover a worm in your cod, you can always remove it before cooking to 60 degrees, or just simply return it to the store or fish monger. Hope this explains!

    My favourite fish... the cod.... fresh is good " skrei" but the dry salted cod is God... bacalhau ... Norway cod is the best in the world ... when a Octopus recipe?

    can I make that with something other than sauerkraut? I'm allergic to sauerkraut. it's delicious I love it but I can't eat it because I'm allergic
