Pour avoir déjà essayé de suivre ses recettes, les explications sont excellentes, ce n'est pas difficile, mais il faut être très précis et patient. Quand on n'a pas l'expérience, un gâteau comme celui-là; c'est 4h de boulot

You can cook the condensed milk in a pressure cooker. For the texture of the video, 25 minutes after getting pressure should be enough. Here in Brazil it is very common to cook cans of condensed milk to make dulce de leche. Just pay attention to cover the entire can, or cans, with water. AND NEVER open the can while it is hot, because it explodes.

Almost always hard to make and expensive but I've tried a couple of his recipes and they are exceptional. Just sad that I'm too poor because of the pandemic, otherwise I'd make this for Christmas. Looks so good.

Bruno, a technical question about the almond praline. If you were to instead toast some almonds and blend it with caramelized sugar, would you end up with the same thing? Instead of mixing the nuts into the sugar and making almond brittle and then blending it to make the praline?
