Our stuffed bell peppers are a tasty and satisfying recipe that combines rice, lentils, and fragrant spices into a hearty and healthy meal.
The recipe is easy to make with wholesome pantry staples. It's excellent as a main meal, a side dish, and for meal prep.
⭐️ Ingredients
4 medium bell peppers any color
2 tablespoons extra virgin olive oil
1 large onion chopped
3 cloves garlic pressed
½ teaspoon cumin
½ teaspoon turmeric
¼ teaspoon red pepper flakes
1 cup (200 grams) rice
1 can (15 oz) (240 grams) lentils drained and rinsed
1 can (15 oz) (400 grams) diced tomatoes
1 teaspoon salt
¼ teaspoon black pepper
2 cups (500 grams) vegetable broth
½ cup (15 grams) parsley chopped
TOPPING SUGGESTIONS

Made it this afternoon according to the recipe, but I needed three more cups of water (not a big deal)...used 1 cup jasmine rice and steamed lentils from Trader Joe's. Delicious. Love your channel.

You are a super creative chef!
I addition. Use condensed, (undiluted Tomato canned soup. Mix into the seasoned rice mixture. Stuff into bell pepper halves. Place in a baking dish and pour more condensed tomato sauce to cover. Bake at 350 degrees for 15 minutes, stir. Bake for a total of 1 hour until pepper cuts with a fork. You can also top with provolone cheese

I would blanch the peppers for 1-2 minutes, and if your gonna put yogurt on there you might as well put cheese it will taste way better.

So we just going to ignore the fact that there's a hair in the onions at 0:09
I didn't have lentils so I used quinoa instead. Also instead of yogurt, I put mozzarella cheese on top of the peppers for the last 10 minutes of baking.
If you choose smaller peppers and just fill it up fully without cutting them in half, it would be dolma 😍

People act like vegans are crazy. We just want people to eat a lot of the things they already do, but with plants. Plant foods that taste better and are better for you. I’ve reached a point where, I feel like, to not encourage other people go vegan/plant based is irresponsible. The amount of energy and mental clarity being plant based is huge for me. The food tastes better, even if it didn’t though. I will not condemn animals to be brutally and savagely extinguished on my behalf for my taste pleasure.
Definitely dont neglect at least stretching your shoulders & back out! I understand how sus it can feel to go to the doctors though ... awesome garden 👍 Ive been wanting to learn more about peppers so this was a good episode for me.
