Great shoemaking. So if we remove the insoles we can see the stitching going through the sole or not ? Because in blake stitched we can se the thread going through the sole once we remove the insoles. My main concern is if we tell by removing the insole that a shoe is goodyear welted or not.

Little greedy with the hot cork. In my opinion the shoes feel better when the cork covers the whole bottom. Especially these high end shoes. Other than that a good shoe.
If you go on the website, you can use the customise tool then go into the welt and edge style,(edge section), selection and there are lots of options for both 270 or 360 welts, they’re the same price. The 360 option gives slightly more protection at the cost of slightly more difficult and expensive heel replacement. I would imagine that this is the reason for the cork layer being up to the heel as well, if you go for 360 welt you can probably request full cork layer as well.

It's cork. As you use the shoe the cork shapes according to your foot making the shoe more comfortable the more you use it.
