BONUS CONTENT: Cab Franc and Cava

  • If you, like me, are desperately looking for other things to focus on right now, why not consider looking into wine a little? I did a broad video on the topic years ago ( • The Spirit Nerd's Intr... ) but today we're getting specific. If wine (as I said there) is about food, and wine is at its best with food, what wines should you start with to maximize pairability? What bottles can you bring with you to a hub of BYOB restaurants that will probably work with all of them?
    I'm gonna say Cab Franc and Cava. Cabernet Franc, especially from colder climates like the Loire Valley (look for Chinon, Bourgueil, Saumur...), has ripping high acid, insane aromatics, and enough tannins that it can work with heavier meals like grilled meats but not so much that you can't also rock it with fish. Cava, Spain's native sparkling wine - and especially the absolutely insane values from the Gran Reserva category - also brings a lot of acidity, more body than bone dry budget bubbly should have any right to have, and a floral/green character that works really well with everything from salads and sushi up to fattier cuts of red meat. Plus, really good options from both categories can be had for under twenty bucks.

      Oof, I think I forgot to normalize this one, sorry. But yes! Greek varietals are still not readily available in the US, but I absolutely adore Xino and Assyrtiko (and don't forget Moscofilero). Malagousia I know less about, beyond an Alpha bottling I tried (and enjoyed) years ago, and they're even less available - but hopefully that will change!

    French cab francs can lend themselves to ageing. I have a bottle of Bernard Baudry La Croix Boisée 2019 laid down, picked up in a "caviste" in Saumur last year. Drinking window runs into the early 2030s. Price of a good entry-level Burgundy or second wine from Bordeaux Grand Cru.

      Absolutely true. There are a lot of new-school inexpensive Cab Francs out there built for early drinking, but the old-school ones can easily last for decades. And they're still reasonably priced!
