With Indian cooking, spices are pretty much the same. It’s the method of cooking that differs and obviously the protein too. The ecookbook has starters, bites, sides, and a bunch of curries which will have similar spices but varying methods of cooking.

Yes of course. It would add more flavour but will take longer. Also recipe the amount of tomatoes you use.

Hey the sugar is to balance the sourness from the tomatoes, if there is any. I would taste first then add sugar if needed
you can also add a little bicarbonate of soda, since its just a base it helps to nullify some of the acidity of the tomatoes. works great !!

Okay don’t blend them. Just grate them or just simply cut them into segments. But you’ll have to remove the skins after they break down.
