I want to know how a person with dementia would follow this protocol, it seems hard to do for a healthy person. Suggestions would be greatly appreciated.

That's a lot of apps and gizmos to expect a senior with dementia to use.

Yes, but I don't think you have to do all those to follow the standard protocol. Did you notice how near the end he said he and his wife are trying to optimize their total health, not just avoid Alzheimers? And how multiple times he talked about using something that he had found and the coach said was nice?
I do think following the standard protocol or some reasonable facsimile is very important, because the alternatives are almost unspeakably horrible. Slow painful decline, while the person pretends not to know. Memory care facility at a high cost per month. Both accompanied by intense pain and suffering for the loved ones, and all finally followed by an earlier death. No one talks about it, but Alzheimer’s is actually fatal if you look at the data. While they do not die from Alzheimer’s per see IIUC, they do die within 10 years. I think Bredesen's first patient started in like 2010; she's survivor #1 in the book IIRC and at least as of date of writing was not just getting by but back to running a high-powered business.
