In today's new video, our chef instructor Hiro sensei shows you how to fillet sea bream (3 pieces filleting) and some useful tips of special filleting technique for sea bream family. Let's try to fillet sea bream family by yourself.

@tokyosushiacademyenglishcourse what kind of knife was used? It looked like a deba but the profile was thinner like a gyoto but had a thick spine.
He is using a mioroshi deba. It's a deba that is longer and for filleting as well.
