In Tuscany we are at a restaurant called Chiassi Bistro’ owned by a Sicilian family. Not only was the family so humble their food was absolutely delicious. I had the best cannolo ever. I thought it had a slight bitter taste . It Will be much better next time . Not so much of a mix just two buzzes ok Alessandra . I think I did great though mom said it tasted great . They say a 1/2 tsp baking soda helps with the acid so I’ve heard ? . It’s acid or to much blending ? . I could strain out the sauce through a fine mesh strainer so no seeds get in . I agree with you get the best ingredients you can afford that sets the bar for the best possible outcome. I can see you set yourself up for success right out of the starting gates. You might like the Le Creuset enameled cast iron pot they are easily cleaned and really energy efficient a real pleasure to cook with. Not cheap of course but we’ll worth the investment

I am making your Sunday Sauce right now. The butcher gave me GIANT slices of meat so we will be having some monster braciole! I accidently opened up 3 cans of tomatoes and 1 can of puree so I just threw the puree in the sauce and added the fourth can of tomatoes. I see that you don't put garlic in your sauce but I always do, so, I did. I am going to add the sugar at the end. My husband likes sweet sauce. Stupid me put the meatballs in at the beginning so I'll cook them for 30 minutes, remove them, and then cook sauce for 2 1/2 more hours. My fear is the meatball thieves will find them! I learned how to make sauce from Chef Pappini when I was in school at the Culinary Institute of America a very long time ago (I graduated in 1977). I've had a number of baking and chef jobs but raising and homeschooling children turned out to be my primary job. I love ethnic foods. My husband's father was 100% Italian. I learned a lot of recipes from his mother (who was taught by her mother-in-law) and his Aunt Lena. I will cook food from any ethnicity. I especially love Italian, Polish, Korean, Thai, Indian, and Greek. I normally do not mess with anyone's recipe until after the first try. Then I make it my own. Chef Pappini's recipe is so good and so close to yours that I was afraid of messing with a taste my family is so fond of. I did, however, leave out the tsp. of oregano. Pappini calls for a stick of sweet butter when the sauce is done but I will forego that. :-) A few questions: I see that you fry your meatballs. My feet hurt today so I baked mine in the oven. When I took them out I scraped everything out of the sheet pan into the pot. I figured if they cooked in the sauce all that stuff would have gone into the sauce, right? Would you have done that? I could have sworn that you had some fresh basil on your counter and heard you say you put it in at the end. I didn't see it in the list of ingredients so I looked back at the video there it was! Hello Eleanor, What a wonderful message. Hats off to you for your schooling. I’m humbled that you made my Sunday sauce recipe. If I have large gatherings I too bake the meatballs and use an 85/15 chop meat. I don’t necessarily scrape the bottom of the cookie sheets but do add a little of the oil in the sauce! :) it can’t hurt it. It’s all flavor. I’ll have my video editor ( my hubby) add the basil that’s missing out of the recipe. It’s so overwhelming to write the recipe because I always tend to forget something. It’s a work in progress. So wonderful that you learned from your MIL that shows love for your family. My husband is not italian and I learned how to cook Indian/Pakistani food because it’s all about what gives us comfort. 🥰 Many of the recipes are on my channel under South Asian recipes. My father in law lived with us for 23 years and I learned so much from him. Lost him 19 months ago and I miss him terribly. Thank you so so much for watching. Is Nina your go to sauce in a can or do you like others ? . And your tomato paste to ? . You don’t add much sugar to your sauce and that’s a lot of sauce going by your recipe online . Would a 1/4c be ok for that amount of sauce or less Ty , Sharon 🙋🏻♀️

Nina is a good brand but I’ll buy any imported plum tomatoes. If San Marzano even better.
