- Creamed Spinach with Gruyère is not your average vegetable side dish. It's a love story between fresh baby spinach and creamy béchamel. Stir in lots of Gruyère and Parmesan cheese, which add a nutty taste and make this even creamier. Be sure to broil at the end to get a golden brown, bubbly top! Enjoy with steak, chicken, pork, or really any dinner in need of a vegetable side dish. Gluten-free adaptable.
🍴CREAMED SPINACH ingredients🍴
2 lbs (32oz) fresh baby spinach
2 Tbsp unsalted butter
1 medium shallot, finely chopped
3 cloves garlic, finely chopped
Kosher salt
1 Tbsp all-purpose flour
1 cup milk
½ cup heavy cream
¼ tsp ground nutmeg
¾ cup (2½-3oz) Gruyere, grated
¼ cup (1oz) Parmigiano Reggiano, grated
Freshly ground black pepper
