To answer your question, they're playing Chinese Chess (Xiangqi). Xiangqi is sort of like chess, except for a few exceptions. The King and his two advisors can only stay within their respective palaces, and you can't move a piece such that your king sees the enemy king. The "bishops" can only play on your half of the board. Pawns can move left/right after they cross to the enemy side of the board. There is an extra Cannon piece (honestly my favorite piece) that jumps over enemy pieces to capture. The moves the old people are shouting as they're pummeling the enemies are the names of famous endgames (similar to chess how there are known endgames)
