- Today it’s the Blue Hawaii Cocktail: Classic vs. Elevated - with Blue Foam! Blue Hawaii is the perfect Tiki drink for Summer, but can we elevate this cocktail by turning it upside down? The original Blue Hawaii was created in 1957 in Waikiki, Hawaii, by Harry Yee, the head bartender of the Kaiser Hawaiian Village, which later became the Hilton. It is a well-balanced and undeniably intriguing cocktail, but I wanted to make my own signature version of this drink, by using two layers. The bottom part will be a milk-washed cocktail without the blue color and with a little saline solution, and on top we'll have a creamy blue foam with orange for a stunning presentation. Will we be able to make this blue, tropical cocktail in a way that could be served at high-end cocktail bars? We’ll give it a try, and if you want to see how it turned out, pull up a chair and get ready - it’s Cocktail Time!

I make a very tasty, well-balanced variation of the Blue Hawaiian which I call the Pacific Fleet on account of its navy blue color. The secret is the addition of acid adjusted blood orange super juice, which is an amazing ingredient. I never make normal orange super juice, it can't compete in flavor, aroma, or color! I use 2oz lightly aged white rum and eschew the vodka (Foursquare Probitas/Veritas rum is fantastic for this), 1oz blood orange acid adjusted super juice, 3/4oz Giffard or Marie Brizard Blue Curaçao, 3/4oz Coco Real, 2oz pineapple juice. Shake on cracked ice, open pour and serve with a straw of course! If you're feeling really extra, float a small model aircraft carrier or battleship in there 😜

For citrusy gin, can I choose TANQUERAY NO.TEN GIN, The Botanist Gin or beefeater?
i don't have cream whipper. Could I skip the blue foam step? What do you suggest if there is no blue foam in my clerify cocktail?
from theese three I would go with the No10. If you don't have a siphon, you can blend the foam and scoop it with a spoon.

How many cocktails can you make with the quantity of this recipe? Do they scale proportionally?
Has anyone tried the inverted process recipe and achieved the same results as in the video? I tried it, and while the cocktail was delicious, it wasn't as colorless as in the video. This could be because I used muscovado sugar, which is darker than demerara. However, the foam wasn't as nice as in the video. Firstly, it wasn't as blue and the texture was completely different. Right after blending, it already looked different, resembling white suds with a hint of blue.

For some reason when I try to clarify the cocktail comes out completely clear/translucent but with a yellowish color. Any idea why this could be?

Are you able to use this method of blending methylcellulose without hydrating first when making super syrup?
That can be done too, but then you'll have to wait for the foam to settle. Otherwise, it will be hard to measure the correct volume of the syrup. Vacuum blender might be helpful here, but I haven't tested it yet.

I used blue curaçao instead of cointreau 3 drops of blue food coloring, and the foam is left with a very intense blue

I tried making this foam twice, and followed the directions. It never looked like how yours looks. It had bigger bubbles in it and then settled into more of a syrupy float as the foam bubbles popped and changed into just the float. How did you get your foam so "foamy"?
did you use the right methycellulose? It happens that someone uses Carboxymethocellulose which doesn't work here.
Is there somewhere that I can read about using methu and xan gum in foams? I always end up making this weird jelly when I use them in my foam

Hey guys how do you solve the problem of too thick pineapple juice? Do you just add water or also sugar? I tried juicing pineapple yesterday but didnt quite like the result. Or am I just wrong and its supposed to be thicker than other juices?
you can try adding some water or you can strain it through a filter if the pulps are a problem.
Let’s say I just want to make the milk washed version sans foam - would you recommend the specs as is or add an orange liqueur into the cocktail for washing? (I wonder how a clarified blue curaçao would look ahha)
in this case add orange liquour to the punch as well.
Kevin, is it necessary for the pineapple oleo sachraum to use the lemon peel? Or also omit the peel and make it only pure pineapple?
No need for that. I wanted to make it more citrusy and bright.
I've tried a version of this drink and... for me... the vodka ruins it. But that's just me.
Other than that I'm sure it's great but I don't have all these powdered ingredients and don't think I ever will.
