Step 1: Make the chicken adobo
Ingredients
2 Tbsp vegetable oil
1 tsp salt
6 bone-in chicken thighs
6 cloves garlic
1 onion
1 tsp black peppercorn
4 bay leaves
½ cup vinegar
⅔ cup soy sauce.
2 cups water
1) Heat vegetable oil over high heat in a heavy bottomed sauce pot. Salt chicken thighs, then sear, skin side down for about 3 minutes, until some fat has rendered from the skin and it’s nice and browned. Flip the chicken thighs to brown the underside, then remove from the pan and reserve.
2) Palm heel strike the garlic cloves, peel them, and add to the oily pot with peppercorns and sliced onions. Drop the heat to medium then sautee for 5 minutes, until the onions are translucent.
3) Add in bay leaves, soy sauce, vinegar, water, and reserved chicken thighs.
4) Simmer on low for 3 hours.

Step 2: Make the Coxinha Dough
Ingredients
1 bowl cooked white rice
1 pot chicken adobo
1 bowl flour
1) Remove chicken from the braising liquid then shred the meat and mix with rice.
2) Strain the adobo braising liquid, then gradually add flour and stir with a wooden spoon until the mixture is doughy. Wrap the dough in plastic and let chill in the fridge.
3) Roll the coxinha dough out until thin, then add the chicken and rice mixture. Shape into a cone and allow to chill in the fridge,

2 mixing bowls
1 silicone spatula
Rolling pin
Step 3: Fry and assemble
Ingredients
Filled coxinhas
Flour
Egg
Breadcrumbs
Reserved adobo braising liquid
Malagueta hot sauce
1) Roll coxinhas in flour, then in egg mixture, then in breadcrumbs and deep fry at 350 degrees for 4 minutes.
2) Add hot sauce to adobo liquid and serve in a little dipping cup.

I come from a melting pot city and a lot of my friends are different races, and holy cow were our potlucks fire. You had stuff from LATAM, north and east Europe, every section of Asia possible, and even east Africa on occasion. Unforgettable times

The best foods I've ever had in my life were Filipino, Thai, and Mexican. Absolutely flavorful and delicious. I cannot get enough of them
I know that there is probably a TON of research and thought that goes into these dishes, but i like to imagine that Josh just. Magically knows this stuff off the top of his head. Like. No planning whatsoever. Just Josh running around for 20 minutes, info dumping, and BAM. Food.
I would like to think that's true even if it isn't..

Mietczyński (polish youtuber) chellanged himself to cook a dish from another country, but the twist was that he was following video tutorial in the original language (I think it was Hungarian) and tried to figure out ingridients by looking at them... Pretty funny idea, maybe mythical chef would take the chellange? :D

Make this a recurring segment!!! I can imagine some extremely imaginative fusions, and Josh would do amazing with them!
It's gonna get real easy with some regions; any of the big 5 fusing would be real easy because that's already been done countless, and if any of the big 5 with some other region were to happen, that would be easy too. The fun would be in mixing 2 foodwise obscure regions, say Russia and UK.
Big 5 being: Italian, French, Indian, Turkish and Chinese.

@@arthurl4300 Think the primary issue is that the UK has so few cultural foods that aren't from somewhere else. You pretty much just get fish 'n chips, an english breakfast, shephard's pie and blood pudding. At least if you want to stick to more main stream food and not go into something like Haggis which would be pretty easy to add another meat dish to.

Love seeing Josh saying "coxinha" and "churrascaria" so perfectly (and "pimenta" right at the first time)... Yet he still need a little help with "cachaça" (pronounced as ka-xa-ssa).

I like how josh ended up creating almost a "bolinho de arroz" (this translates into little rice cakes but it is actualy a kind of dumpling) and a Coxinha at the same time and it made me hungry cuz i love both dishes haha. If you enjoy that rice inside a dumpling you should definely try our brazilian bolinho de arroz next time Josh!

2) I really enjoy the content on this channel. You're doing great, Josh. It seems like you are at the helm here, and I am thoroughly entertained. You think things and you say them. Maybe you leave it up to the editors to do with your footage as they wish. Bottom line: it's funny.
3) I like seeing Nicole, Trevor, V, and Emily in your segments too. Haven't seen Emily in a while....*hint* *hint*. All of them are great. We all have our favorites. Shout out to Emily and Trevor.

Coxinha is the combination of the chicken filling and the shaped dough that evelops it.
If you only change the shape it into a ball, most people would not call that a coxinha anymore, even though the taste is the exact same.
If you change the filling by lets say cheese, your coxinha doesn't taste the same anymore, it tastes like bolinha de queijo.
It comes down to what people prioritize in the dish, be it the shape or the filling.
I personally think that changing the either part of the dish and still call it coxinha is stupid. I'd gladly eat it though

This commenter inspired segment was a wonderful idea. I love the international dartboard game on GMM, and since Josh is responsible for a lot of magic happening there, it makes sense we can see more culinary ingenuity happening here.

Usually we also add mashed potatoes in the coxinha dough for a creamier texture and amazing flavor 😊

Do y'all not have industrial composting where you live? (I'm genuinely asking, btw. I'm so used to it in where I've lived for over a decade now, and it's been here for a lot longer than that. But Seattle is admittedly more progressive than a lot of regions.)
I love the way he does his videos! He is funny and has a bunch of unnecessary stuff being said, but he is enjoyable throughout all of it. It's also nice that he puts the recipe in the description for when people actually want to make the food.

Ahh lumpia, the first food to magically disappear in a party so fast
Seeing him being so respectful towards brazillian culture and food during the coxinha making,its really hearthwarming! Sometimes we bread our coxinhas with panko or just real thin breadcrumbs,and the Classic filling is chicken. But there are many other types of fillings like brazillian sausage (calabresa),jerked beef and crab! Besides the potatoes, its commom use mashed cassava root in the dough.

I like this idea, but I think it would be interesting to see more footage of the process & preparation on how/why each dish was picked in the planning stages. It goes from Josh spinning the globe, to Josh starting to cook right away. It would be neat to see the planning and maybe even test cooking (if there is any).

I love how Josh chastised Lucas for double dipping but Josh straight up put his mouth on the hot sauce bottle right before squeezing more hot sauce into it lmaooooo
When I saw Josh deciding to stuff the coxinhas with rice instead of catupiry or any creamy cheese at all I was really afraid they were gonna end up being super dry, but apparently everything turned out really fine! Also, I don't really know how subtitles work in videos here in UA-cam, but if there's a way to edit them, it would be really cool to update them with the right spelling of "cachaça" when Josh mentions the brazilian liquor. I absolutely loved this segment and hope to see more of it (even if they don't involve my country, haha), it really shows how much effort you guys put into it, congrats!
I appreciate the few times between being completely ridiculous and seemingly random when Josh actually talks about food with great care and enthusiasm.

This idea is really really good! Especially works with someone like Josh who has a lot of knowledge on multiple cuisines… They should maybe make a wheel of kitchen-ality with different regions or something cuz the globe spinning thing doesn’t like that smooth… once a region is pointed on they can switch it out for another one and so on (maybe it could be like two to three countries per continent to keep a good mix)
I feel like choosing the two countries wasn't really random and was staged. This is still an interesting and enjoyable video, but I'm curious to see an actual random pairing.
May I suggest using a wheel since it is also a part of the Mythical brand. Maybe call it the "Wheel of Mythical Kitchenity." The wheel would be covered, similar to the Wheel of Mythicality. When it lands on an option you can cut and stage whatever countries' dishes you are planning to fuse. It helps sell the illusion that this is random.
Also, you can still keep the pun of putting your own "spin" to the original suggestion.

cachaça is basically fermented sugar cane and it is a classic drink here in brazil! It's more common on "Minas Gerais" one of the biggest brazilian states!

Ohhhh I love coxinha! I usually have an awful time making it, the dough is much harder to handle, but this recipe looks damn good. I’ll have to try this one instead of the regular recipe.

Years ago I moved from San Diego to Albuquerque. Facing a 3 day drive in a ten foot truck after not driving at all for 3 years after working the night shift. A Filipino man I worked with brought a large package of homemade lumpia, "so you have good food to eat". One of the nicest things anyone has ever done for me.
This is such a good idea for a show. Its creative and quirky without being gross or too gimmicky.
