    I have to say a huge thank you for sharing these videos, very much appreciated. Simple, straightforward home cooking that doesn't need to be complex to be delicious. I'm not the greatest cook around but I'm improving on the stovetop. The method of simmering a soya-based sauce to thicken gave me a few ideas (used too much water before!) and I've made adaptations of these dishes with great success (I use cornflour as it's easier to get here than tapioca). And I have to say the wok is probably my favourite cookware, it's very versatile and there's nothing quite like the fresh taste of stir fried vegetables at high heat. The only downside is that it takes more work to maintain & keep rust-free!

    Hi there fantastic video I actually cooked your beef in mushrooms this evening it was delicious although I can’t seem to find tapioca starch I ended up using wheat starch not sure if that made much difference thanks for your videos

    Question when you are marinating the chicken can you use cornstarch or potato starch in place of tapioca starch?

      Yes, use cornstarch instead of Tapioca starch ( the reason I used tapioca starch is that they are highly available in our asian groceries and they also cost much much less than cornstarch.     Ok my friend, this is tonight's dinner. Very excited for your recipes, they Always come out Perfect ! I just don't have any hoisin sauce, not sure what other sauce that comes close, as I don't know what it tastes like. My choices that I have are Worcestershire sauce, teriyaki sauce or Oyster sauce, oh and of course Soy sauce. Hopefully you can get back to me asap, lol to help me out 😁 thanks

      Thank you so much for appreciating my editing style. I would recommend to use peanut oil for hot heat stir fry cooking. It got property that it can stand higher temperature before it start to emit smoke ( higher smoke point compare to most cooking oil ) for deep frying, i use regular canola oil for it is less expensive that peanut oil.     Great recipe! So easy to follow. I had trouble w/ the chicken sticking to the pan due to the corn starch, (I didn't have tapioca starch).

      +Kristin Cunningham --- I don't see any different , using tapioca or corn starch. But sticking on the pan ? I would add a little more cooking oil to hot pan and to the meat, before stir frying. Thanks for asking.

      You have to use a lot of oil (If your wok/pan isn't well-seasoned).
      When you take out the chicken, use a slotted spoon.
      You can dispose of some oil and leave a few T. to cook the vegetables.

    Hi my friend, just finished cooking and serving dinner and it was Delicious. As I didn't have the hoisin sauce, I just used what I had so I used a few tablespoons of Oyster sauce. It was Still awesome as All your recipes are. I served it over a bed of rice but made sure as I was cooking to have Enough juice flow so it wouldn't be dry. 😁 came out great though, thanks.
    Maybe you can start the ingredient Measurements at the beginning of the video, I know it would help me out, not sure about anyone else though. But thanks for another delicious Spread 💛😁💚 Much Love from America

    How do I stir fry to garlic without burning it

      Try to control the heat. Also don't wait too long for the cooking oil to heat up. It might be already too hot. After stir fry the minced garlic for 5 to 10 seconds, immediately add your next ingredients ( meat or veggie ) Thanks for asking and also Thanks for watching..

      No. Vinegar is vinegar, and wine (well) it's wine. The process in making each is completely different. FYI the wine he is using is Xaoxing rice wine (Chinese cooking wine). Hope that helps.

    I have recently found your channel and will be trying some of your recipes this week. I am worried about overcooking the chicken. Can I add a pinch of baking soda with the chicken marinade to tenderise the meat?

      Yes, you can add baking soda to tenderized the meat. What I would do, is just add baking soda to meat and then rinse it , before using in the recipe. Thanks for asking and thanks for subscribing.

    for stir fry , when should u make mushroom quarters vs slices?

      I would used slices much more than quarters, if i am doing quick stir fry cooking ( example: stir fry with noodle or with lot of other ingredients to mix with ). for quarters, may need a little longer to cook ( example, stew or cooking with lot of sauce mixture to simmer ( covered ) for few minutes. thanks for asking.

    what oil do they use? I have a problem that the ginger and garlic get burnt almost immediately. If i lower the heat, the ginger/garlic barely sizzles

      i used canola cooking oil. but peanut oil will be the best. got higher smoke point. also i used cast iron wok, it is heavy and thick. some stainless steel , think wok are not recommended for high heat stir fry cooking. thanks for asking.

    gotta ask this. You're using electric stovetop and a round bottom wok. how do you stabilize your wok? if you are using a wok ring, does you're wok bottom touch your burner? mine doesn't. do I need a bigger wok ring?

      It is recommended that we should used flat bottom wok for electric stove. Unfortunately, we move from apartment with gas range to an apartment with electric range / stove only. I love my wok very much, that i just add wok ring. and it work for me. It doesn't touch the burner but the heat radiation is enough to satisfied my stir fry cooking experience.( all the video you see in my cooking channel , uses this set up ) Thanks for asking.

      I use only brands that i been using for a long time, meaning tested brand. New brands popping up , every now and then, from different countries. Never know what ingredients they made from. taste maybe the same, or maybe plain salty. thanks for asking.

      Your right, sesame oil was not listed, my apology. It was 1 Tbsp. The Hoisin sauce was listed as 1 Tbsp. ( sorry, those are my early video, and editing, still learning stage. )
