How to cook Achicha /Echicha ede

- Achicha ede (Cocoyam) is a delicacy eaten by the Estern part of Nigeria, precisely Enugu State. It is prepared with cooked & dried Cocoyam & fio fio(pigeon pea)
Ingredients :
Dried Cocoyam (ede)-500g
Pigeon pea (fio fio)-300g
Palm oil-200ml
Onions - 4 balls Nigeria
Ukpaka (oil bean) optional- 100g
Scent leaf - a handful
Pepper to test-3 pice herbanero
Salt to test to test.
Method
Wash your achicha and soak 3 - 4 hours (preferable soak overnight) to soften it.
When the achicha is softened, squeeze out the excess water and steam for about 45 - 1 hour.
Cook your fio fio until it is very soft (use pressure pot if possible for fast cooking)
Use
When both the fio fio and achicha are cooked,
Make source with oil, onion, pepper, Ukpaka, scent leaf and salt
Mix everything together until the sauce is well incorporated with the achicha and fio fio and then your food is ready.

Hinweis: Um den Test und die Textur Ihrer Mahlzeit nicht zu behindern, lassen Sie die Achicha während des Dämpfens kein Wasser einweichen, fügen Sie der Sauce auch nicht viel Wasser hinzu.
