Always take out beef from the fridge, well in advance before cooking.
Bring it back to room temperature for success in searing!!

I would like to ask if it possible to add alternatives to the ingredients in the video. In my place it is difficult to find sushi rice vinegar and mirin for example, so what do you think would be the best substitute?
Phai san, sorry for the late reply! Thank you so much for your compliments, super flattered :) As to answer your question, you can simply use normal vinegar as a substitute for rice vinegar...as for the mirin, you can replace it with mixture of sugar and sake. To 1TBSP Sake, add 1TSP sugar then mix it. This is a popular way to substitute for Mirin when we run out of it in ordinary Japanese home :)
